How To make Vegetarian Stuffed Peppers
1/2 lb Dry red kidney beans
1 c Brown rice
6 Green peppers
3 tb Olive oil
4 Garlic (minced)
1 Onion (diced)
2 Stalks celery (diced)
2 Carrots (diced)
2 Tomatoes - peeled, seeded,
1/2 ts Dried basil
1/4 ts Dried red pepper flakes
1/2 ts Dried oregano
Bring 2 1/2 cups salted water to boil, add 1 cup rice, cover and simmer for 45 minutes (or until all liquid is absorbed). Put 2 tablespoons olive oil
in frying pan and add the minced garlic. Saute for 3 minutes, stirring so the garlic doesn't burn. Add onion, celery, and carrots and saute for an additional 5-7 minutes. Remove from heat and mix with the rice. Add the seasonings (all the dried seasonings, plus salt and pepper) and mix well. Mix in the beans with 2 tablespoons of the reserved liquid. Cut the tops off the green peppers and remove the seeds. Stand peppers in shallow baking dish that has been brushed with 1 tablespoon olive oil. Fill peppers with bean and rice mixture. Ladle seasoned diced tomatoes over top of each pepper and top off each with a tablespoon of reserved liquid. Cover dish and roast in 350' oven for 35-45 minutes or until peppers are tender.

Ingredients:
6 bell peppers
2 cups of brown rice (cooked)...1 cup of dry rice
Baby bella mushrooms
1/2 yellow onion
1/2 cup of chopped bell peppers
Shredded cheese (of your choice...I used cheddar and monterey jack)
14.5 oz can of diced tomatoes
15 oz can of tomato sauce
1 cup of spinach
Olive oil
3 cloves of garlic
Onion powder
Garlic powder
Garlic pepper
No-Salt Seasoning
Smoked paprika
Parsley flakes
Preheat oven to 350 degrees. Pre-bake the bell peppers for about 15 minutes. You could also boil them for a few minutes on the stove. Make your filling. Stuff the peppers with your desired ingredients. Bake in oven for about 20-25 minutes.

Stuffed peppers are always a family favorite. This classic version is loaded with ground beef, garlic, onion, tomatoes, spinach, and rice. They're easy, healthy, filling, and bonus - they make for delicious leftovers or meal prep.
When bell peppers are sliced in half they become the perfect vegetable to stuff with a variety of ingredients. They're firm enough to hold their shape while cooking, yet soft enough to enjoy sliced up with the filling, for a self-contained complete meal. Enjoy them for lunch or dinner!

For 3 large bell peppers:
1 cup medium grain rice
Washed and soaked for 1 hour
2/3 lb ground beef
2 tbsp ghee or oil
1/3 cup water
1 tsp cumin
1 tsp garlic powder
1 tsp all spice
1 tsp safflower or paprika
1/2 tsp black pepper
1.5 tsp salt
Cover in water
1/4 cup tomato paste
8 cloves of garlic Pounded with 2 tsp salt
