How To make Black Bean& Root Vegetable Stew
1/2 c Black beans, soaked
1/2 md Turnip, cut into rounds &
-- each round halved 1/4 ts Nutmeg
2 lg Carrots, quartered
1 t Dill weed
3 lg Potatoes, quartered
2 tb Parsley
1 lg Onion, sliced
1 md Parsnip, quartered
1/2 ts Oregano
1/2 c Green peas
1/2 c Mushrooms, halved
Salt & pepper Water or stock to cover
In the bottom of a large casserole dish, arrange the turnip slices & sprinkle with the nutmeg. Layer the rest of the vegetables in order, sprinkling in the herbs after each layer. Top with the soaked beans. Pour over enough water or stock to cover & season with salt & pepper. Cover with a good tight-fitting lid & place in an oven pre-heated to 300F. Cook for 3 hours. If you desire, add dumplings & cook for a further 30 minutes. NOTE: I made this recipe to emphaise the taste of the root vegetables. Add whatever vegetables & herbs you wish. I used black beans to add some protein. If exchanging legumes, be sure to use ones that can stand a lot of cooking, kidney beans or chick peas, for example. Recipe by Mark Satterly

Veggie or Vegan Black Bean Soup
The Black Bean like all Common Beans is all American in Origins.
Introduced to Europe after Columbus discovered the new world.
Just like from the Americas also came Corn, Chocolate, Squash,
Tomatoes, Potatoes, and many more fruits and Veggies.
This variety of bean is very common in cuisine in the Americas.
Mainly Cuba and Central America for soups and eaten alone.
In North America, it rests in large burritos, and a side dish of Spanish Foods.
Also called the Turtle Bean, or Blackhawk bean from the Native
Americans.
This is one soup that is in my top 5 favorites!
Healthy. Nutritious.
The taste is awesome! I can't even explain it all here.
And fully Vegan.

Ingredients:
1 Tsp Olive Oil
1 Onion
2 Cloves Garlic
2 Carrots Sliced
1 Tsp Cumin Ground

Black eyed peas are excellent source of soluble fibre which can help eliminate cholesterol from the body. Low in fat and high in protein which make thiem an excellent energy source. High In potassium and low in sodium. They help eliminate excess moisture from the body. Healthy and nutritious soup for the whole family.
Ingredients
100g black eyed peas soaked for 2 hours
450g pork bones
2 chicken drumsticks
1 piece dried abalone
4 pieces chicken feet
6 red dates
1 handful of cashew nuts
1.5 litres water
All ingredients into the pressure cooker at soup function and let it do it’s work. Alternatively can boil at stovetop at low heat for 2-3 hours or until beans are soft. Increase water up to 2.5 litres if boil on stovetop.

Vegan Stew Recipe - Vegetable Casserole (One Pot)
How to make this delicious vegan stew recipe. This vegetable casserole is perfect for lunch or dinner! It is easy to make since all it takes is one pot. It's healthy and really tasty! All measurements and steps are below.

Instructions and measurements may be a little different than in the video.
Ingredients:
A large handful of celery (with leaves) (100g)
2 garlic cloves
2 onions
3 TBSP coconut oil or olive oil
1/2 tbsp of cinnamon powder
1/4 tsp pepper
1 tablespoons of salt
3 cups chopped carrots (400g)
2 cups (265 g)
3 tsp dried oregano
3 large Dried Bay leaves
2 tsp Fresh Thyme
Fresh Rosemary
4 tablespoons flour,
7 cups filtered water
11/2 cups of red wine
2 cups tomato sauce
1 veggie stock cube or 2 tbsp broth powder
1 stick of cinnamon
4 cups chopped sweet potatoes (550 g)
6 cups chopped potatoes (890 g)
500g fresh gnocchi
Steps:
To a food processor or you’re going to add in the celery, garlic cloves, and onions. process until mashed. Set aside.
To a non stick pot add some oil, the mishmash that you made in the food processor. Cook for 7 minutes on medium - high heat with lid off. Then add carrots, beets, and herbs (dried oregano, cinnamon, rosemary, thyme, bay leaves, salt, pepper) and let cook for 15- 20 min on medium- high heat with lid off.. Ur veg should be caramelized. You can turn heat down to low on last 10 min.
Add Flour, and mix with a spoon. Add wine, tomato sauce, water, broth cube, cinnamon stick, potatoes. Wait for your stew to come to a boil. This may take some time. then Cook with lid on for 45 min or until potatoes are tender. ( in the video instructions for this is a little different but this method is easier.) Finally add in fresh gnocchi and cook for 3 minutes.
Taste and add more salt if needed. Enjoy!
