How to make Cream Puffs | Choux Pastry Recipe | Eclairs & Profiteroles
Hi Guys !!!
I must firstly apologize for the late video, I had a crazy summer with family and it was so difficult to post a video.
I really hope you like this recipe, this is one of my most favorite recipes. Up till a few years ago I didn't share this with anyone !!
Choux Pastry
There are so many different names for this pastry but originally its a Choux pastry, the eclairs and profiteroles are more names give to the shapes you make.
Also I forgot to mention this recipe easily yields around 30 small eclairs, so that's a great amount. Probably the size of golf balls.
Ingredients :
All Purpose Flour ( Plain flour ) - 150 grams
Butter – 80 grams
Water – 300 ml
Eggs – 4
Baking times 20mins at 420F
further 7mins at 400F ( You want a golden brown finish)
Larger pastries may take longer so add a few more minutes.
Some tips -
Sift your flour to avoid lumps
Use a large saucepan the larger surface area will be easier to work on when mixing in the flour
Use a electric whisk or stand mixer on the lowest setting. You don't want to add air into the batter, so a stirring motion is best.
Add your eggs very gradually, take your time and do it slowly.
Know your oven, sometimes we need to keep an eye on whats being baked, some ovens are hotter or brown very easily.
Place your tray in the middle of the oven.
Allow to brown nicely, a slightly darker brown is good too for the pastry this will ensure a stronger shell.

INGREDIENTS
1 1/2 cups (67 g) hazelnuts
3 large eggs
2 tablespoons (16 g) instant coffee or espresso
2 cups (240 g) all-purpose flour
1/4 cup (20 g) unsweetened
Dutch-process cocoa powder
2 teaspoons (10 g) baking powder
1 teaspoon (3 g) kosher salt
8 tablespoons (4 ounces/ 112 g) unsalted butter, at room temperature
1 cup (192 g) sugar, plus more for sprinkling
2 teaspoons (10 ml) pure vanilla extract
1/2 cup (90 g) semisweet chocolate chips

CREAM PUFFS RECIPE
(makes 20 small puffs)
Ingredients:
Pastry:
3/4 cup ground oats or oat flour (75g)
1/4 cup tapioca starch or cornstarch (35g)
1/4 tsp salt
2/3 cup water (150ml)
1/4 cup butter (50g)
1 tsp maple syrup, honey or agave
2 eggs
Filling:
2/3 cup heavy cream (150ml)
2/3 cup ricotta cheese (150g)
2 tbsp honey
2 tsp vanilla paste or vanilla extract
NUTRITIONAL INFO (per piece):
91 calories, fat 6.1g, carb 6.9g, protein 2.1g
Preparation:
In a bowl, add the ground oats, cornstarch, and salt. Mix and set aside.
In a saucepan, add the water, butter and your sweetener. Heat over medium heat and when it starts to boil, remove and stir in the dry ingredients. Mix and after couple of seconds when the dough starts to form, cook constantly stirring over low heat for 2 minutes.
Remove from heat and let it cool for 5 minutes. Add one egg and using a wooden spoon or mixer work the egg into the dough. Beat the second egg into the small bowl and add slowly to the dough, add just enough to make your dough the right consistency.
Transfer the dough into a pastry bag or any other freezer bag, and pipe onto a lined baking tray.
Bake at 400F (200C) for 10 minutes, then lower the temperature to 325F (160C) and bake for another 20-25 minutes.
When baked poke a tiny hole on the side of each puff and place back to the turned-off oven. Let it cool completely.
For filling, add the cold cream into the bowl and whip until stif, add the riccota, honey and vanilla and mix until combined.
Using a pastry bag fill your pastry shells.
Dust with the coconut powdered sugar or drizzle with melted dark chocolate.
