Ingredients
Lady's Finger/Bhindi - 250 Gms
Oil
Whole Spice
(Bay Leaf, Cardamom, Clove, Cinnamon & Mace)
Onion - 2 Nos Chopped
Green Chili - 1 No. Chopped
Chopped Garlic - 2 Tsp
Chopped Ginger - 2 Tsp
Tomato - 3 Nos
Turmeric Powder - 1/4 Tsp
Chili Powder - 2 Tsp
Salt - 1 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 1 Tsp
Curd - 1/2 Cup
Water - 1 Cup
Garam Masala - 1/4 Tsp
Sugar - 1/2 Tsp
Coriander Leaves
Kasuri Methi
Stuffed Okra Fry (Bharwa Bhindi) recipe -
Bendakaya Pulusu (Okra in Tamarind Gravy) recipe -
Method
1. Rinse the lady's finger in water and dry it completely before cutting them.
2. Cut the lady's finger to 2 inch pieces and keep aside.
3. To a mixer jar, add tomatoes and grind them to a smooth puree.
4. Grind this to a smooth paste and keep this aside.
5. Heat some oil in a kadai and fry the lady's finger and keep them aside.
6. Add some more oil to the same pan and add the whole spices.
7. Add the chopped onions, ginger, garlic, green chilies and saute them.
8. Add the ground paste and cook.
9. Add the spice powders and saute them well till oil is separated on the sides.
10. Add water and cook the gravy.
11. Add salt and the fried lady's finger pieces.
12. Cook the gravy well.
13. Finally add kasuri methi and coriander leaves and turn off the stove.
14. Serve the gravy hot with some rotis

Dhaba Style Bhindi | ढाबा स्टाइल चटपटी भिंडी मसाला बनाने की आसान रेसिपी | Sanjeev Kapoor Khazana
Most have fond memories of food cooked in wayside dhabas and one such is the Dhaba Style Bhindi. Indeed, shallow frying the lady’s finger and cooking it fresh with tomato puree and spices does make it tasty.
DHABA STYLE BHINDI
Ingredients
300 grams lady’s fingers (bhindi), stemmed and slit without cutting through
4 tbsps oil
1 tsp cumin seeds
2 tbsps chopped garlic
2-3 green chillies, chopped
2 medium onions, chopped
1 cup fresh tomato puree
Salt to taste
1 tsp red chilli powder
½ tsp turmeric powder
1 tbsp coriander powder
1 tsp cumin powder
2 tbsps cashew paste
1 tsp garam masala powder
¼ tsp dried fenugreek leaves (kasoori methi) powder
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Method
1. Heat 2 tbsps oil in a kadai and sauté the bhindi for 2-3 minutes. Drain and set aside.
2. Heat remaining oil in the same kadai, add cumin seeds and once they start to change colour, add garlic and green chillies sauté for 30 seconds.
3. Add onions and sauté till golden brown. Add tomato puree and salt and mix well. Cover and cook till oil separates.
4. Add red chilli powder, turmeric powder, coriander powder and cumin powder and mix well.
5. Add ½ cup water and mix well. Add cashew paste and mix well.
6. Add ½ cup water, cover and cook for 4-5 minutes on medium heat.
7. Add bhindi, garam masala powder, kasoori methi powder and coriander leaves and mix well. Cook for 1-2 minutes.
8. Transfer in a serving bowl. Garnish with coriander sprig and serve hot.

BHINDI DAHI MASALA
Preparation time 10 minutes

Ingredients
For Sauteing
½ kg Ladyfinger (trim the head & tale) भिन्डी
2 Green chilli (slit into half) less spicy हरी मिर्च
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
1 tsp Mustard oil, सरसों का तेल
1 tsp Oil, तेल
Salt to taste, नमक स्वादअनुसार
1 medium size Tomato, roughly chopped, टमाटर
For Curd Mixture
1 cup Curd, beaten, दही
½ tsp Turmeric Powder, हल्दी पाउडर
1 tsp Degi Red Chilli Powder, देगी लाल मिर्च पाउडर
1 tsp Coriander Powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
½ tbsp Mustard oil, सरसों का तेल
1 tsp Gram flour, बेसन
For Ginger Green chilli Paste
1 inch Ginger, peeled, अदरक
2 Green chillies, cut into half (less spicy) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
For Gravy
1 tbsp Oil, तेल
½ tsp Mustard oil, सरसों का तेल
1 tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
1 tsp Coriander seeds, धनिया के बीज
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण
few fresh Fenugreek leaves, ताजा मेथी के पत्ते
½ cup Water, पानी
½ tsp Sugar, चीनी
Sauteed Ladyfinger, सौतेद भिंडी
For Tadka
1 tsp Oil, तेल
2 tsp Ghee, घी
5-6 Cashew Nut, काजू
5-6 Raisins, किसमिस
3-4 Button chilli, बटन चिल
1 tsp Coriander seeds, crushed, धनिया के बीज
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Sauteing
In a large bowl, add ladyfinger, green chilli, degi red chilli powder, turmeric powder, coriander powder.
Add mustard oil, oil, salt to taste and mix well.
Heat a pan on medium flame, transfer the marinated lady finger into the pan and saute well.
Add tomato and saute for a minute.
For Curd Mixture
In a bowl, add curd, turmeric powder, degi red chilli powder, coriander powder, salt to taste.
Add mustard oil, gram flour and mix well. Keep aside for further use.
For Ginger Green chilli Paste
In a mortar pestle, add ginger, green chilli, salt to taste and grind it into a rough paste and keep aside for further use.
For Gravy
In a deep pan or kadai, add oil, mustard oil once it gets hot, add cumin seeds, fennel seeds, coriander seeds and let it splutter well.
Add prepared ginger garlic paste and saute well.
Add curd mixture and mix well. Cook on medium flame for 2-3 minutes, add few fenugreek leaves, water and mix well.
Add sugar, sauteed lady finger and tomatoes and mix well on low flame.
Once done transfer it into a serving bowl, pour the prepared tadka on top of it.
Garnish it with coriander sprig and serve hot with roti.
For Tadka
In a pan, add oil, ghee once it's hot, add cashew nut, raisins, button chilli fry until light golden in color.
Add crushed coriander seeds and let it splutter well.

Bhindi Masala Recipe | भिंडी मसाला | Chef Sanjyot Keer
Written recipe for Bhindi masala
Prep time: 15 mins
Cooking time: 30 min
Serves: 6
For half cooked lady finger
Ingredients:
• Bhindi (Lady finger) 250 gm
• Oil 2 tbsp
Method:
• Wash the lady finger well and wipe it with a dry cloth.
Note: prefer small size lady finger, if the lady finger is big in size cut in 2 halves.
• Cut the head and put an incision in between.
• Set a pan on medium high heat and heat the oil. Shallow fry the lady finger until half cooked. Remove and keep aside.
Ingredients:
• Oil 1 tbsp
• Jeera (cumin seeds) 1 tsp
• Onions 3 medium size (chopped)
• Ginger garlic paste 1 tbsp
• Turmeric powder ½ tsp
• Coriander powder 1 tbsp
• Red chilli powder 1 tbsp
• Aamchur powder 1 tsp
• Tomatoes 3 medium size (chopped)
• Salt to taste
• Curd 2 tbsp
• Water 300 ml
• Kasuri methi 1 tsp
• Fresh coriander 2 tbsp (chopped)
• Garam masala 1 tsp
Method:
• Set a wok on medium heat, add oil and jeera sauté for few seconds.
• Add onions and cook until golden brown, add ginger garlic paste and sauté for 1-2 minutes.
• Add the powdered spices and mix well, add tomatoes and slat to taste, cook until tomatoes are mushy.
• Slow down the flame and add the curd, keep stirring continuously, add water, cook and bring to a boil.
• Add the half-cooked lady finger, add kasuri methi, garam masala and freshly chopped coriander leaves.
• Your bhindi masala is ready to be served, serve hot with roti or paratha.
