Every country and culture has their own idea of barbecue, and in the United States alone there are at least five or six different styles. Heck, even Texas has four or five different ways to barbecue but it is most known for the low and slow Central Texas style with briskets, pork butts and sausage.
But when you make your way down south to the border, barbecue means fajitas, sausage, chicken halves, tablitas, loaded ribs, finger ribs and more. It’s a whole other world of barbecue in the Rio Grande Valley where we are lucky to be able to experience BOTH of these styles within a few miles of each other.
In this video we’re gonna stop by 492 BBQ in Palmview, TX where owner/Pitmaster Lupe Garza cooks up delicious platters of fajitas, sausage, beef short ribs and even LAMB BREAST! Plus a whole buncha other delicious meats and traditional South Texas sides. Growing up in South Texas this is the carne asada style of barbecue that I grew up with and what I cook at home most of the time.
After that feast, and a nap, drive we’re gonna take a ride across the Rio Grande Valley to Teddy’s BBQ, a more traditional Central Texas Style joint that holds a coveted spot in the Texas Monthly Top 50. Here at Teddy’s, Co-Owner/Pitmaster Joel Garcia is blazing his own trail by cooking all the popular smoked barbecue meats like brisket and pork ribs, while also offering some unique, must try twists on tradition like the chile pequin sausage and beef fat flour tortillas.
So it’s time to loosen up those belts again and follow me down Expressway 83 to enjoy both the delicious charred carne asada goodness and that smoky, barky melty in your mouth barbecue. Vamonos!

Smoked Brisket Step By Step On The LoneStar Grillz 24X48 Offset Smoker
Smoked Brisket step by step instructions that will make you successful when you BBQ your next beef brisket. This smoked brisket was cooked on my new LoneStar Grillz 24X48 offset smoker. This is one beast of a smoker and it is only right that I smoked brisket first on this beautiful stickburner from LoneStar Grillz. I smoked this brisket at 275° for about 10 hours. It was seasoned with bold flavors from Kosmos Q. I used SPG, Cow Cover, and Texas Beef, all from Kosmos. I wrapped the brisket in butcher paper about 5 hours into the cook. I never wrap to time or temperature, I wrap to look. When it looks right I wrap it. This brisket came out tremendous with the oak and mesquite wood that I smoked it with. I use a combination of 60/40 or 70/30 oak to mesquite. This way it will give us the great flavors we want here in South Texas. Please check out LoneStar Grillz and tell them Chef Johnny sent ya to them. Thanks to Frac Daddy BBQ for stopping by and giving me a hand on this excellent smoked brisket.

JEDDAH, SAUDI ARABIA - Welcome to Jeddah and today we’re going on a food tour, where the main event is going to be a whole lamb roasted for 5 hours over fire, basted with its own oil, and then eaten with honey. An absolutely incredible lamb experience in Saudi Arabia!
Thank you to Hisham: for taking me around eating in Jeddah!
To begin the day, there’s nothing better to eat than ful, mashed fava beans, but at this breakfast restaurant in Jeddah they specialize in smoked ful, when some ghee is burned on an onion to give the ful a lovely smokiness.
We then headed to a nice restaurant to try traditional Jeddah style breakfast, a meal that would typically be eaten on special occasions. The variety and color were beautiful!
Hareed Restaurant: - Finally on to lunch and the full lamb meal experience. Chef cooked the lamb for 4 - 5 hours over a wood fire, continually rotating it and basting it in lamb oil. It’s the most golden crispy lamb I’ve ever had and eaten dipped into honey. We also tried quite a few other lamb dishes, all the lamb coming from their own farm!
Later in the evening we tried a nostalgic fries stall with all sorts of different sauce that you put on, and my personal favorite - chickpeas!
It was a great day of food and exploring in Jeddah, Saudi Arabia!
