Belgian Beef & Beer Stew - Step by Step
A traditional Belgian recipe: As dark beer is usually loaded with flavors, all further necessary ingredients for this exquisite dish are mainly beef and onions, salt and pepper. Some herbs, like bay leaf and thyme, can add some pleasant fragile side notes. You might add further vegetables such as potatoes, carrots, celery - if you can spare the time.

2 C baby potatoes, washed and quartered
1.5 C Bella Mushrooms quartered
1 tsp fresh thyme, minced
1 Tbls parsley
Instructions

-Toss beef cubes with seasoned flour and brown in batches in the dutch oven
-Add onion and saute until softened, about 4 minutes.
-Set browned beef aside on a plate.
-Add minced garlic and saute 2 minutes, then stir in tomato paste and cook 1 minute.
-Stir in beer, stock, soy sauce, Worcestershire sauce, brown sugar, and season well with salt and pepper.
-Bring to a boil and reduce to a simmer
-Add in browned beef and any juices.
-Cover and simmer for 1 1/2 hours.
-Add carrots, mushrooms, potatoes, thyme, and half the parsley.
-Cover and simmer for an additional hour.
Recipe Notes
-You want to get a deep, brown sear on the beef.
-The flour on the beef helps it brown and will also help to thicken the sauce as the stew cooks.
-Try to keep the vegetables as uniform in size as possible so they cook evenly.
