Beef Bourguignon - Slow Cooked to Perfection!
Rich and Comforting Beef Bourguignon in a delicious rich sauce…. Slow cooked merrily in the oven until beautifully tender. This is a great dish for when you have guests.

Ingredients for the Beef Bourguignon:
1 tbsp vegetable oil
120g (½ cup) bacon or pancetta lardons
20 small shallots peeled, 6 of them cut in half, the rest left whole
1.4kg (3 lbs) beef braising steak i.e chuck or skirt, cut into large chunks
3 tbsp plain/all-purpose flour
¼ tsp salt
¼ tsp black pepper
1 tbsp tomato purée
1 x 750ml (25oz) bottle red wine it doesn’t have to be an expensive wine, I used Shiraz
240ml (1 cup) beef stock
3 bay leaves
1 tsp dried thyme
16-20 chantenay carrots peeled
150g (2 cups) brown mushrooms thickly sliced

Bean Bourguignon
Bean Bourguignon
A plant-based version of the beef Burgundy, a French beef stew braised in red wine. (Based on a recipe from the Culinary Institute of America.)
Ingredients (serve 4):
* olive oil
* 2 oz smoked tempeh (optional)
* 3 shallots, diced
* 2 cloves garlic, minced
* 4 carrots, peeled, diced
* 12 oz cremini mushrooms, quartered
* 4-6 potatoes, peeled, diced (optional)
* 1 sprig thyme
* 1 sprig rosemary
* 1 bay leaf
* 1 can crushed or diced tomatoes
* 1/2 cup vegetable broth
* 1 ½ cup red wine (I use Pinot noir)
* 2 cans kidney beans, drained
* salt and pepper, to taste
* 2 tablespoons vegan butter (I use Earth Balance)
* 1 Tbsp corn starch
In a large sauté pan (or Dutch oven), heat the oil over medium heat. Add the tempeh, shallots, carrots, and garlic, and cook until the shallots are translucent, about 5-6 minutes.
Add the mushrooms and potatoes, and continue to cook for 5-6 minutes more.
Stir in the thyme, rosemary, bay leaf, tomatoes, broth, and half of the wine. Bring the mixture to a boil, reduce heat to low, cover, and simmer until the vegetables are tender, about 20–25 minutes.
Add the rest of the wine, beans, salt, and pepper. Cover and continue to simmer until good flavor develops, about 20 minutes more. Remove and discard the herbs and bay leaf.
Combine the butter and corn starch in a small bowl. Add the mixture to the pan and allow the liquid to thicken. Remove from heat and serve.

Tempeh Bourguignon Recipe
This vegan tempeh bourguignon recipe is not the same sauce you'll find in Julia Child's Mastering the Art of French Cooking. Luckily, bourguignon does not necessarily have to be as complicated as all that, and really just refers to a sauce based on the wine made in the Burgandy region of France.

1 cup onion diced
1 clove fresh garlic
200 gram tempeh
1 Tbsp whole grain flour (use sorghum for gluten-free)
1/2 cup red wine
1/2 cup water
1 tsp dried thyme or dried
1 Tbsp fresh parsley finely chopped
pinch sea salt
pinch black pepper to taste

Mushroom & Kidney Bean Bourguignon | Vegan Recipe

recipe:
1 cup diced carrot
1 cup diced celery
1 cup shallots whole
2 1/2 cups chopped mushrooms
3 cups fresh tomato purée
1 tbs olive oil
1 tbs veggie stock powder
Salt*
2 tbs corn flour
2 garlic cloves
1 cup rose wine
2 tbs balsamic vinegar
1 cup cooked kidney beans
1 tsp fresh thyme
Sweet potato mash
mash sweet potato and season with salt, pepper and garlic powder
