How To make Bean Burrito Layers
1/2 c Green Lentils; dried
1/4 c Pinto Beans; dried
1/4 c Red Kidney Beans; dried
1/4 c Baby Lima Beans; dried
1 Onion; medium
4 Garlic Cloves
2 Jalapeno Peppers *
1 tb Oregano; dried
1 tb Chili Powder
1/4 c Coriander Leaves; chopped
6 oz Monterey Jack Cheese; grated
6 Flour Tortillas; 10"
1 Tomato; medium, chopped
1 Lettuce; shredded
1 Salsa
Servings: 4 Rinse lentils and beans, discarding any that look suspicious, and soak in clean water 4 - 6 hours, or overnight. Put into medium saucepan, bring to boil and simmer, covered, 30 minutes. Add water if necessary. Peel and chop onion. Microwave on "High" 2 - 2 1/2 minutes until soft. [If you prefer, you may saute the onion in about 2 T. oil. I omit the oil to keep the fat content down. The flavour does not seem to suffer.] Chop the Jalapena pepper. (*) Adjust the quantity to your own taste and / or tolerance. Peel and crush the garlic. Drain the lentil-bean mixture. Reserve 1/2 cup of liquor. In a food processor puree the lentil-bean mixture, the onion, the garlic, the jalapena peppers, the oregano, the chile powder, and the coriander leaves, adding some of the reserved liquor as necessary to process. [The final puree should be quite thick.] Pre-heat the oven to 325 F. Assemble as follows on an oven-proof plate, pizza-pan or cookie-sheet: Place a flour tortilla on the *lightly* greased surface. Cover with lentil-bean puree [4 - 5 T.]. Sprinkle with Monterey Jack cheese. Add another flour tortilla and repeat, saving enough cheese to cover the top of the final flour tortilla. Bake for 20 - 30 minutes. Remove from oven and allow to "firm-up" for 5 - 10 minutes before serving. Garnish with salsa, chopped tomato and shredded lettuce. Serve with rice, Couscous and / or corn. The amount of oregano, coriander leaves, chile powder, or jalapena peppers may be varied to suit individual tastes. I use more peppers! If you're prone to "problems" with beans, add 1/4 - 1/2 t. Hing [Hing is a mixture of rice-flour, turmeric and asafoetida found in most East-Indian specialty stores. It can significantly reduce flatulence.

Mexican Veg Burritos Recipe | How To Make Burrito | Homemade Burritos Recipe
Ingredients :
Oil
Some cumin seeds(jeera)
5-6 finely chopped garlic cloves
1.5 finely chopped onion
3 tsp Salt
Mexican seasonings
4 finely chopped tomatoes
1 cup boiled rajma(soaked overnight)
2 tsp red chilli powder
Some finely chopped green chillies
Water
1 tsp roasted cumin seeds powder
Add 1/2 cup mix of sweet corn and green peas
1.5 cup cooked rice
200 gm Tofu
2 tortilla wraps(maida roti - optional)
Some shredded cheese
3-4 coriander leaves
3-4 mint leaves
Method :
For Rajma Spread :-
Heat up the pan, pour 1 tsp oil
Add some cumin seeds(jeera)
Add 2-3 finely chopped garlic cloves
Add 1/2 finely chopped onion
Add 1 tsp salt
Add some Mexican seasonings
Add 1 finely chopped tomatoes
Add 1 cup boiled rajma(soaked overnight)
Add some water and crush rajma with a help of spoon
Add 1 tsp red chilli powder, mix it well and turn off the stove.
Transfer the mixture in a bowl, rest it for a while, further grind the mixture & make a thick paste.
For Rice :-
Heat up the same pan, pour 1 tbs oil/butter
Add 2-3 finely chopped garlic cloves
Add 1/2 finely chopped onion
Add some finely chopped green chillies
Add 2 tsp salt
Add 1 tsp roasted cumin seeds powder
Add 1 tsp red chilli powder
Add some Mexican seasonings
Add 1/2 cup mix of sweet corn and green peas
Add 1.5 cup cooked rice(basmati rice/ brown rice/quinoa/khus khus - optional) and mix it well.
For Tofu:-
Fry 200 gm tofu(paneer/nuggets/fries - optional) with some salt, red chilli powder & roasted cumin seeds powder (paneer/nuggets/fries - optional)
For Tomato Salsa :-
Take a mixing bowl
Add 3 finely chopped tomatoes
Add 1/2 finely chopped onion
Add some finely chopped green chillies
Add some finely chopped coriander
Add 1 tsp salt
Add 2-3 tsp tomato ketchup/tomato juice and mix it well.
To Make Burrito Roll :-
Take a plate, place a tortilla wraps(maida roti - optional) on it.
Place 1 tbs rajma mixture and spread it over tortilla wrap
Place 3 tbs rice
Place 1 tbs tofu
Place 2 tbs salsa mixture
Place some shredded cheese
Place some coriander and mint leaves on top
Now fold burrito from sides and roll it.
(Roll another burrito with same procedure)
To Grill Burrito :-
Heat up the grill pan/flat pan, pour some oil on it
Place burritos on the pan(keeping folded side down)
Brush some oil on it spreaded on the pan
Flip the sides when it is nicely grilled.
And then your Healthy Wholesome Meal with little Cheesy Twist Mexican Burrito is ready.
Cut the Burrito and serve it hot!!!

7-LAYER BURRITO
Mexican cuisine is quite possibly the healthiest in the world, but it never compromises on taste! These Taco Bell style burritos are made of 7 LAYERS! Comprised of refried beans, chunky salsa, creamy guacamole, Mexican Rice, sour cream, crunchy lettuce and cheddar, all layered together inside a soft flour tortilla, it's a complete meal contained in a handy wrap.
Makes 6 burritos
INGREDIENTS:
6 tortillas
Mexican rice:
Salsa
Guacamole
Refried beans
Grated Mild Cheddar Cheese
Lettuce
Sour cream
INGREDIENTS FOR TORTILLA
1 cup whole wheat flour (atta)
2 cups all purpose flour (maida)
½ tsp salt
¾ cup water (or as required)
INGREDIENTS FOR REFRIED BEANS:
2 tbsp Olive oil
6-8 Garlic cloves (minced)
1 tbsp jalapeños chopped ( optional)
2 cups Kidney beans (boiled)
½ tsp Red chilli powder
1 tsp Salt or to taste
1 tbsp Lemon juice
2 tbsp Coriander (finely chopped)
INGREDIENTS FOR GUACAMOLE:
1 big avocado
1 small onion (finely chopped)
1 small tomato (finely chopped)
4-5 garlic cloves (minced)
1 tbsp jalapeños (finely chopped) (optional)
1 tsp lemon juice
½ tsp salt (or to taste)
2 tbsp coriander (finely chopped)
METHOD FOR TORTILLA:
Take flour, oil and salt in a bowl
Add water little at a time and knead to make a semi-soft dough
Apply a little oil and let it rest for 15-20 min
.
Knead again
Divide into 6-7 equal parts and shape into a ball
Flatten with a rolling pin to make a roti
.
Heat a tawa on medium flame
Place the roti on the tawa and cook till it is half done
Flip and repeat process
Keep aside
METHOD FOR REFRIED BEANS:
Heat oil in a pan
Add garlic and sauté for 30 sec
Add jalapeños, beans, red chilli powder, salt and mix
Cover and cook for 8-10 min
Mash the beans with a potato masher
Add lemon juice and coriander
Mix well
REFRIED BEANS ARE READY
Keep it aside
METHOD FOR GUACAMOLE:
Take all the ingredients together in a bowl
Mix well
GUACAMOLE IS READY
Keep it aside
HOW TO ASSEMBLE 7-LAYER BURRITO:
Heat a tawa on medium flame
Place half-cooked tortilla and heat on both sides
Transfer into a plate
Place refried beans, then layer with Mexican rice, salsa, sour cream, guacamole, lettuce and cheese
Fold like a wrap
