A long time ago, I made some shrimp scampi that blew my mind away. Not only is it delicious, but it is super versatile! This Garlic Shrimp Scampi is just that: delicious & versatile. Pan searing some shrimp in a butter garlic and white wine sauce, you can cook this in 10 minutes serving it over some pasta, rice and just as is. It is a fun & simple dish that you’ll wish you made more. Just make sure to make some crusted bread to soak up that juice in the skillet. It’s worth it!

Recipe
Ingredients:
1 Lb. Local Shrimp, Split
3 Tbsp. Butter
¼ Cup Honey
2 Tbsp. Soy Sauce
1 Tbsp. Lime Juice, (1 Rolled Lime)
1 Tbsp. Sesame Oil
2 Tbsp. Garlic, Minced
2 Tbsp. Ginger, Minced
1 Tsp. Chili Paste (more if you like it spicier)
2 Tbsp. Green Onion, chopped
2 Tbsp. Onion, Minced
1/2 Lb. Broccoli Florets, cut bite sized
Sesame Seeds
Cornstarch Slurry (equal parts water and starch)
Preparation:
1. In a large pan, melt the butter and sauté half of the garlic and the ginger. Once aromatic, add honey, soy sauce, lime juice, sesame oil, chili paste.
2. Bring to a boil and slowly drizzle the cornstarch slurry into the boiling sauce until the desired thickness is achieved. Add the green onions and remove from heat.
3. In a wok, over medium-high heat with vegetable oil, sauté the broccoli florets until they start to brown on the edges (Add a splash of water to the wok to help steam a little faster). Remove from the wok using a slotted spoon and place on the side.
4. In the wok, add the remaining garlic and ginger, as well as the onion. Sauté until fragrant, about 2 minutes. Add the shrimp and sauté until almost cooked.
5. Add the broccoli, toss to mix.
6. Add the sauce to the wok and toss to combine everything.
7. Serve over white rice.
8. Garnish with sesame seeds and more green onions if desired.

- white wine
- olive oil
- salt and pepper
flavored butter (measurements to taste!):
- unsalted butter at room temperature
- lemon zest
- minced garlic
- minced shallot
- thyme
- lemon juice
- Aleppo pepper
- panko breadcrumbs
- salt & pepper
- top with panko breadcrumbs
- lemon wedges for serving
