► Ingredients:

All Purpose Flour - 2 1/2 cup
Salt - 1 tsp
Sugar - 3 tbsp
Butter - 1 cup
Sugar - 1/2 cup
Corn Flour - 3 tbsp
Cinnamon - 1 tsp
Strawberry - 500 gms
► Method:
=========
1. Blend flour, salt, sugar, and butter.
2. Add 2 tbsp cold water and bring it into a dough.
3. Keep it refrigerated for 1 hour.
4. Mix strawberry with cornflour, sugar, and cinnamon.
5. Roll out the dough and place it on to the mold.
6. Add the strawberry mix and place another rolled out dough on top.
7. Bake it on a 200 degree preheated oven for 45 minutes.

Ingredients for 10 mini pies

Dough
130g softened butter
80g caster sugar
250g (2 cups) all purpose flour
1egg,(Sub: 1 flax egg for vegan)*
1/2 tsp salt
1 tsp vanilla extract
*1 flax egg =1 tbsp freshly ground flax seed+3 tbsp water
Homemade raspberry jam
700g raspberries, fresh or frozen
350g caster sugar
1/2 lemon, zest and juice
1 tsp vanilla extract
2-3 thyme sprigs
Instructions
Make the dough: beat butter and sugar until well combined. Add egg, vanilla and salt and beat to combine. Add flour and beat just until the dough comes together. Wrap and refrigerate for 30 min. Roll out dough to 3-4 mm and cut out rounds that fit the tart mold.
For best results, blind bake.
Fill with jam, fresh raspberries and thyme. Cover with smaller dough rounds.
Bake in a preheated oven at 180C degrees for about 20 minutes.
For the jam
Combine the ingredients in a large heavy pot. Let macerate for 1h, then bake for 1h. Fill sterilized jars with hot jam and let cool upside down.

BETH’S CHERRY PIE RECIPE
Serves 6
FOR THE CRUST:
2 ½ cups (300 g) flour
1 tsp (5 ml) salt
3 tbsp (64 g)sugar
1 cup (240 g) unsalted butter
1/3 cup (80 ml) ice water
FOR THE FILLING:
2 ½ lbs (1130g) frozen cherries, rinsed and thawed
1/3 cup (35g) cornstarch
1/3 cup (65 g) sugar
pinch of salt
METHOD:
In a food processor, combine the flour, sugar, and salt and pulse until combined.
Then slowly add the butter, pulsing all the while, until you get a coarse meal. Then slowly add the ice water, and pulse until a dough ball forms.
Turn your dough out onto a floured surface into 2 equal sized balls. Flatten into disks, wrap in wax paper and pop in the fridge for at least 1 hour.
To create your filling. Combine cherries, cornstarch and sugar. Toss to coat well and allow to rest for 10 minutes. This will allow the cherries to emit more liquid and drain further.
Roll our the first disk of dough into a large circle, transfer and fit into a 9” (23 cm) pie plate, you should have about 1-2 inch over hang.
Spoon the cherry mixture into the crust, leaving any remaining liquid in the bowl. Don’t add that or you will end up with a soggy pie. Then brush the sides of the pie crust with some lightly beaten egg.
Roll out your second dough into a large circle the same size as your pie. Slice the lattice strips and starting from the center, place the longest strip first, pressing the ends into the crust at the rim, the egg wash will secure it, and then work to the outer edges with smaller strips. You should get 5-6 strips across your pie.
Then do the same thing the opposite way to form a lattice pattern.
Trim the edge of the overhang, with some kitchen shears, so it is a uniform length., about a ½ inch overhang
Then fold over the overhang towards the center of the pie, crimping the dough together all around your pie to create a uniform crust. Trimming off edges that are too fat, and adding to the parts that feel to thin
Then to make a decorative edge you can use the the Pastry Wheel Decorator, from Talisman Designs or make your own crimped design with your hands.
Place the pie in the freezer for 10 mins to harden up the pastry.
Lightly brush the chilled pie with a beaten egg, to assure a golden crust and shiny surface once baked.
Add a pie shield to protect the crust while baking, and leave it in place for the duration of the baking time.
Bake at 425F (218C) for 15 mins just to quickly bake the crust and set it, then reduce the oven to 350F(176C) and go for another 45 mins
Allow it to cool completely, and then serve with a big scoop of vanilla ice cream!

Betty demonstrates how to make her Be My Valentine! Chocolate Cheesecake. This is a cake for chocolate lovers, and it is also very romantic.
Be My Valentine! Chocolate Cheesecake
1 1/3 cups dark chocolate wafer crumbs (I used Oreos, with centers removed, and crushed them finely.)
2 tablespoons sugar
¼ cup butter, softened
¼ teaspoon ground cinnamon
1 ½ cups semi-sweet chocolate chips
2 eggs
½ cup sugar
2 teaspoons rum or rum flavoring (optional—you may replace with 2 teaspoons milk.)
8-oz. carton sour cream
(2) 8-oz. packages cream cheese, cubed and softened
2 tablespoons butter, melted
whipped cream or Cool Whip
diced maraschino cherries
In a medium-sized bowl, combine 1 1/3 cups chocolate wafer crumbs, 2 tablespoons sugar, ¼ cup softened butter, and ¼ teaspoon cinnamon. Use a fork or pastry blender to mix until crumbly. Firmly press into bottom of a 10-inch springform pan; set aside. Melt 1 ½ cups chocolate chips over hot water in the top of a double boiler; set aside. In a large mixing bowl, combine 2 eggs, ½ cup sugar, 2 teaspoons rum, and an 8-oz. carton sour cream. Use an electric mixer to blend until smooth. Add (2) 8-oz. packages cubed and softened cream cheese and blend until smooth. Continue blending and gradually add 1 ½ cups melted chocolate chips and 2 tablespoons melted butter. Blend well. Pour cheesecake batter over chocolate crust. Bake at 325 degrees for 45 minutes, or until cheesecake is set in center. Cool at room temperature for at least 1 hour. Chill at least 6 hours. Remove sides of springform pan and place on serving plate. Before serving, garnish with whipped cream or whipped topping, along with diced maraschino cherries. (I formed Cool Whip into a heart-shape.) Slice into pie-shaped pieces to serve. Enjoy! Happy Valentine's Day from Betty & Rick!
