How To make Bangkok Bean Burgers with Peanut Cilantro Sauce
1 lb Firm tofu
2 c Cooked black beans, well
Drained 3/4 c Quick-cooking oats,
Uncooked 1/2 c Red onion, finely chopped
1/2 c Carrots, finely grated
1 t Plus 1 tsp grated fresh
Ginger root 2 t Tarmari or soy sauce
2 t Packed brown sugar
2 Cloves garlic, minced
1 To 3/2 tsp red pepper
Flakes x Vegetable oil x Flour for dusting x slice peeled cucumber Squeeze tofu in paper towels to discard excess water. Mash tofu in a large bowl. Add rest of ingredients except for oil, flour, and cucumbers. Mix well. Lightly brush both sides of patties with vegetable oil and dust with flour. Brush gill rack with oil. Cook over medium-hot coals about 4 minutes on each side. Serve on toasted buns and top with Peanut Cilantro Sauce and cucumber slices. Peanut Cilantro Sauce: 3 Tbs natural crunchy peanut butter
3 Tbs fresh lemon juice
1/4 cup fresh cilantro, minced

GUATEMALA - After an ultimate Guatemalan street food tour in Guatemala City, we woke up at 4 am the next day to beat the traffic heading towards the Caribbean Coast of Guatemala!
Breakfast - Along the way we stopped to eat some delicious Guatemalan breakfast, including a classic plate with egg and tomato, fresh tortillas and beans. They also made delicious empanadas, stuffed with cheese, beans, and chicharon.
Livingston - We arrived to Livingston, the Caribbean Coast and home to the Garifuna people. First we started with a boat trip up the river to get to Livingston. We stopped at Cayo Quemado to make raw fish with coconut milk. Then we ate at a restaurant called Buga Mama, where they support the community through their restaurants. Chef Sanchez made a few local Mayan and Garifuna dishes.
Las Tres Garifunas, Livingston, Guatemala ( - This meal and experience was the highlight for me, where we met up with Diana and cooked an authentic Garifuna meal.
Cacao Farm - The next day we headed to Rio Dulce, still near the coast, and met up with Mr. Eugenio, from Hacienda Tijax. We had a lovely churrasquito Guatemalan bbq, and then went hiking in the forest to harvest fresh cacao. We then had the treat to make traditional Mayan hot chocolate, something truly spectacular.

PAD THAI (Stir-fried Thai Noodles)
PAD THAI (Stir-fried Thai Noodles)
400 g rice noodles boiled in water for 2-4 mins or until al dente
Sauce:
1/2 c brown sugar
1/2 c patis (fish sauce)
1/2 c lime juice
1-2 tbsp tamarind paste
1 tbsp soy sauce (optional for a darker Pad Thai)
Saute:
Cooking oil
2 red onions, sliced
1/2 cup minced garlic
1/2 cup spring onions
Cilantro roots
250 grams Tofu, cut into cubes
Chicken breast fillet
Shrimps
Bean sprouts
Crushed toasted peanuts
Chili flakes/ fresh red chilies

This recipe takes about 15 minutes to make and feeds 4!!
Here's what you'll need:
1 onion
3 cloves garlic
1 red chilli pepper
small thumb sized piece of ginger
1 sprig of Lemongrass
2 red peppers
1 yellow pepper
220g Bean Sprouts
200g Sugar Snaps
sauce:
1 tin of coconut milk
4 tablespoons tamari
1 tablespoon honey
Juice of 2 limes
240g Noodles of choice
