How To make Baked Stuffed Trout
Ingredients
2
tablespoon
butter, or margarine
1
each
onion, chopped
1
each
celery stalk, diced
1
cup
bread cubes, fresh
1
tablespoon
thyme leaves, fresh OR 1 ts dried thyme
1
salt and pepper
4
each
trout, dressed (about 1/2 pound each)
8
each
bacon slices
1
celery leaves or parsley, for garnishing
Directions:
Preheat the oven to 450 F.
Melt the butter or margarine in a frying pan. Add onion and celery and cook until softened, about 5 minutes. Remove the pan from the heat. Add the bread cubes, thyme, and season with salt and pepper to taste. Stir to mix well.
Season the cavity of each trout with salt and pepper. Stuff each trout with the bread mixture, dividing it evenly among the fish. If necessary, secure the openings with wooden toothpicks.
Wrap 2 bacon slices around each stuffed trout. Arrange in a baking dish, in one layer. Bake until the fish flakes easily when tested with a fork and the bacon is crisp, 35-40 minutes. Serve garnished with celery leaves or sprigs of parsley.

EASY 20-Minute Oven Baked Trout Recipe
Learn how to cook trout in the oven for a tender, juicy, and flavorful fish dish. This oven baked trout recipe is easy to follow and only requires a few simple ingredients. Use this simple recipe for smaller freshwater varieties like rainbow trout. Tips for substituting larger varieties of fish are in the recipe on the blog.
Printable Recipe:
Recipe Ingredients
• Olive oil
• 2 small rainbow trout, cleaned and butterflied (opened up with the halves still attached), about 1 pound
• 1 lemon, sliced
• 4 fresh parsley or dill sprigs
• Salt and freshly ground black pepper
Baking rainbow trout in foil packets helps the fish cook perfectly. While they bake, juices form at the bottom of the packet. This is delicious when spooned over the cooked trout when serving. Other ingredients to consider adding to the middle of the fish are thinly sliced garlic, onion, or greens (like spinach). We also share how to fillet your trout after it is done baking. It is really easy!
How to Make Grilled Trout: Follow the directions in the video to make each packet. Heat grill to medium-high heat. Place the packets over indirect heat. Grill 10 to 15 minutes, or until cooked through.
Note: Parchment paper can be used instead of aluminum foil to make the cooking packet.
