How To make Baked Stuffed Flounder
1/2 c Celery, chopped
1 Clove minced garlic
1 Stick butter
1/2 lb Boiled, chopped, shrimp
1/2 lb Crabmeat
1 Egg, slightly beaten
1/2 c Chopped green onions
1 c Progresso bread crumbs
2 tb Chopped parsley
Salt,pepper,red pepper
Saute celery, onions and garlic in 1/2 stick melted butter. Add bread crumbs, shrimp, crabmeat and parsley. Mix well. Season to taste with salt, pepper and cayenne. Split thick side of each flounder, lentthwise and crosswise, and loosen meat from bone of fish to form a pocket for stuffing. Brush well with additional melted buttter, salt and pepper. Stuff pocket with dressing. Melt remaining 1/2 stick butter in shallow baking pan. Place fish in pan. Cover and bake at 375 F. for abt. 30 minutes. Remove cover and bake additional 5 minutes. This is another delicious quick recipe that you can enjoy on Fridays
Recipe:
2 flounder filets
all purpose flour
veg oil
4 oz. cold butter
2 tablespoons fresh lemon juice
salt and pepper taste
season fish with salt and pepper
dust with flour and sauté in skillet until brown on both sides(about 2 minutes per side)
remove fish from skillet and set aside
For Lemon Butter:
In same skillet remove oil and add lemon juice to low temperature and let reduce slightly
slowly add butter a few pieces at a time while whisking in slowly
add salt and pepper to taste and chopped parsley

Crab Stuffed Flounder
Ingredients:
1 Each Flounder fillet (Top Side Split in half)
1 Tablespoon Lanes BBQ Q-Nami
2 teaspoons Olive Oil
1 Tablespoon Parsley, Fresh Chopped
Crab Mixture (Combine all and mix gently)
4 oz Lump Crab Meat
4 oz Back Fin Crab Meat
½ Each Lemon Juice
1 teaspoon Worcestershire Sauce
1 teaspoon Sriracha
2 Tablespoons Dukes Mayonnaise
2 teaspoon Lanes BBQ Q-Nami
Method:
1. Stabilize your grill between 450 - 550F. Install your sear surface and allow it to come to temperature. Today, I have chosen the Kamado Joe Soapstone.
2. Season the fillets, oil your sear surface, drag test the fillet and lay both fillets presentation side down, close the dome and sear for 1 minute. Flip the fillets and cook for 1 more minute. Top one fillet with the crab mixture then top the mixture with the other fillet and close the dome until you reach an internal temp of 140 -145F, roughly two more minutes.
3. Once the fish has almost reached the desired internal temperature, pour the teriyaki glaze over the stack. Transfer to the presentation plate, garnish with a bit of chopped parsley and enjoy!
