Lemon Parsley Baked Haddock
3 tablespoons lemon juice
3 tablespoons butter, melted
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon smoky paprika
1/4 teaspoon seafood seasoning
4 haddock/cod fillets (6 oz each)
2 tablespoons minced fresh parsley
2 teaspoons grated lemon peel
Preheat oven to 400. In a shallow bowl, mix lemon juice and butter. In a separate bowl mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Place in a baking dish, drizzle with remaining lemon mixture. Bake 15-20 minutes or until fish flakes easily with fork. Mix parsley and lemon peel; sprinkle over fish. Serve.
LEMON CRUSTED BAKED COD, RICHARD IN THE KITCHEN
Easy baked cod recipe just like you get in your favorite cafeteria. Wild caught cod topped with a mayo and lemon based sauce then baked until the crust is golden brown and the fish is super flaky.
Shopping List:
Wild caught cod fish
Kosher salt and course black pepper
1 tsp. Lemon juice
2 tbls.Lemon zest
1/4 cup mayo
1 tsp. Dijon mustard
1/2 cup Ritz crackers
Sprinkle of white wine
Directions:
Pre-heat oven to 350 degrees
Season the cod fillets with a sprinkle kosher salt and black pepper
Place the cod in the oven for 5 mins. After 5 minutes, remove and sprinkle with white wine.
Prepare the sauce with the mayo, lemon zest and lemon juice
Crumple up the Ritz crackers in a plastic bag.
Remove the cod from the oven and give it a sprinkle of white wine. Place back in the oven for 7 more minutes.
Remove the cod from the oven and topit with the sauce then sprinkle the Ritz crackers over the top of the sauce.
Place back in the oven for 2-3 minutes.
Serve with lemon wedges and your favorite seafood sides.

Oven Baked Haddock
2 lbs Haddock Filets
Old Bay Seasoning
Black Pepper
4 Tbsp Butter - melted
1 Sleeve of Ritz Crackers - crushed (approx 35)
1 Tbsp Fresh Parsley - chopped
Lemon - sliced
Crush crackers and place crumbs in a medium sized bowl. Pour over butter and add parsley, mix well.
Lay your filets on a baking sheet. Season with old bay & black pepper on both sides. Grab seasoned
ritz cracker mixture and spread on top of filets. Squeeze lemon on top.
Bake @ 350 F for 15 - 20 minutes depending on thickness of fish.

Lemon Butter Garlic Fish Recipe | Grilled Fish In Lemon Butter Sauce | Pan Grilled Fish In Butter Garlic Sauce | Fish In Butter Garlic Lemon Sauce | Grilled Fish Recipe | Butter Garlic Fish Fry
Ingredients for Butter Garlic Fish:
(Tsp- Teaspoon; Tbsp- Tablespoon )
Boneless Fish Fillets - 350 gms (cut into 3 inch chunks)
For Marination & Coating:
- Salt- 1/2 tsp
- Crushed pepper- 1/2- 3/4 tsp
- Garlic powder- 1/4 tsp
- Dry coating with:
- All Purpose flour- 1/2 cup
Lemon Butter Garlic Sauce:
- Butter- 4-5 tbsp
- Salt- pinch
- Crushed pepper- 1/2 tsp
- Fine chopped garlic- 2 tsp
- Fine chopped parsley- 1 tbsp
- Red Chilli flakes- 1 tsp
- Lemon juice- 2 tsp
- All purpose flour-2 tsp
Preparation:
- Wash and pat dry the boneless fish fillets. Cut them into 3 inch chunks.
- Now add the ingredients for the marinade, rub these on the pieces and set aside for 15-20 mins.
- Now add the all purpose flour on a plate and spread it evenly.
- To dry coat the fish pieces, place the pieces on the flour one at a time and roll it to coat the pieces fully.
Process:
- Heat a skillet and add olive oil or any other white oil.
- Place the battered fish pieces side by side and fry on medium high heat for around 3 mins. Flip all the pieces and continue to fry on medium heat for another 3 mins. Once browned on both sides, remove and on a plate.
To make the sauce:
- Take another pan and heat the butter.
- Now add the chopped garlic and fry for a minute on low heat.
- Now season with pinch of salt and the crushed pepper, give a mix. Add the all purpose flour and cook for 30-60 secs on low heat.
- Lastly add the lemon juice, fine chopped parsley and red chilli flakes.
- Cook for a minute. Remove and pour over the fried fish pieces.

During the 2020 Corona Shut In, On The Water’s Andy Nabreski receives a wonderful gift of fresh haddock. He shows you how to fillet it, check the fillets for parasites, and prepare his favorite, simple, baked fish recipe.
Simple Baked Fish
(Serves 2)
4 6-ounce haddock fillets
3/4 cup Ritz cracker crumbs
1/2 teaspoon Frank’s Red Hot sauce
1 lemon, quartered
3 tablespoons dry white wine
1/3 stick butter, melted
Sprinkle a thin layer of crumbs into the bottom of a ceramic baking dish that’s just large enough to hold the fillet. Melt the butter and stir in the hot sauce and the juice from a 1/4 lemon. Sprinkle the fish with a bit of salt and pepper, drizzle on some butter, and top it with cracker crumbs until all the fish is just barely visible. Add the rest of the butter on top and around the sides. Drizzle a splash of white wine around the edges. Bake it on the top rack in a pre-heated 425-degree oven until the cracker crumbs just begin to brown, about 12-13 minutes. Check for doneness and serve immediately with lemon wedges and tartar sauce on the side.
This recipe is incredibly simple, yet amazingly delicious. It works well with a variety of fish including cod, haddock, pollock, sea bass, tautog, and fluke.
