Crispy Chickpeas From Dried Chickpeas: A Cheap, Healthy Snack
A great healthy snack or garnish for salads and other dishes.

(makes about 2 cups)
In a large bowl, soak overnight:
1 cup dried chickpeas
4-6 cups water
The next day, drain your chickpeas, then add to a pot with:
6-8 cups of water
1/2 tsp salt
Bring to a boil, then lower the heat to a simmer. Cover the pot and cook for 1 to 1 1/2 hours (check for doneness after 1 hour.)
When the chickpeas are cooked, drain (save the cooking liquid to use as a vegan eggwhite substitute!) and dry the chickpeas thoroughly on paper towels. Also discard any skins that came loose.
Spread the chickpeas on a cookie sheet and preheat the oven to 425 degrees. Add:
1-2 tbs oil
1/2 tsp salt
Any other spices you'd like
Toss to coat with the oil and salt, then put in the oven on the top rack and bake for 10 minutes. Give them a stir, check for crispiness, then bake for an additional 5-10 minutes (checking after 5) or until crispy.
Store in an open container (if you cover them with a lid, they'll get stale.)

ROASTED CHICKPEAS
Preheat oven to 400 degrees F.
1 (15.5 ounce) can of Chickpeas or Garbanzo Beans
1 teaspoon smoky paprika
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon cumin
1. Drain chickpeas or garbanzo beans in colander/sieve. Rinse under cool running tap water. Dry on paper towels.
2. Toss chickpeas well with olive oil, smoky paprika, garlic powder, cumin, and salt.
3. Spread coated chicken peas in a single layer on a cookie sheet with sides.
4. Bake in preheated oven for 40 minutes. Tossing or shaking chickpeas every 10 minutes until golden in color.

Ingredients:
3 cups Dried Chickpeas, soaked overnight (gives ≈ 8 cups cooked Chickpeas)
5 cups Water, to cook chickpeas
1 + ½ tsp Chili Powder
1 + ½ tsp Curry Powder
Salt, as needed
2 tsp + 2 tsp Oil

1. Cooked or Canned Chickpeas - Chickpeas can be roasted using cooked or store brought canned ones. To achieve a crispy Chickpeas, it is important to drain the cooked or canned chickpeas from water and pat them dry completely without any moisture left behind and then roast them as suggested in the recipe card
2. Roasting Temperature - Choosing the right temperature is the key to making the best crispy Roasted Chickpeas, so I suggest following the perfect temperature setting to achieve the best results. If the temperature is too high the chickpeas may burn easily
3. Pan Roasting - Pan Roasted Chickpeas are less crispier compared to the oven method, but this method also delivers an equally delicious snack
4. Seasonings - The best part of making these Roasted Chickpeas is seasoning. You can always feel free to use your favorite spice powders and herbs to make a flavor-packed snack
5. How to Store - The Pan-Roasted and Oven-Roasted Chickpeas stay good for up to 2 days. Make sure to store them in a closed container at room temperature and I would also suggest finishing them the second day since it turns chewier as time goes on
