A bagel (Yiddish: בײגל, romanized: beygl; Polish: bajgiel; also historically spelled beigel)[1] is a bread product originating in the Jewish communities of Poland. It is traditionally shaped by hand into the form of a ring from yeasted wheat dough, roughly hand-sized, that is first boiled for a short time in water and then baked. The result is a dense, chewy, doughy interior with a browned and sometimes crisp exterior. Bagels are often topped with seeds baked on the outer crust, with the traditional ones being poppy and sesame seeds. Some may have salt sprinkled on their surface, and there are different dough types, such as whole-grain and rye.[2][3]
The earliest known mention of a boiled-then-baked ring-shaped bread can be found in a 13th-century Arabic cookbook, where they are referred to as ka'ak.[4] Bagels have been widely associated with Ashkenazi Jews since the 17th century; they were first mentioned in 1610 in Jewish community ordinances in Kraków, Poland.[5] Bagel-like bread known as obwarzanek was common earlier in Poland as seen in royal family accounts from 1394.[6]
Bagels are now a popular bread product in North America and Poland, especially in cities with a large Jewish population, many with alternative ways of making them. Bagels are also sold (fresh or frozen, often in many flavors) in supermarkets.
The basic roll-with-a-hole design is hundreds of years old and has other practical advantages besides providing more even cooking and baking of the dough: The hole could be used to thread string or dowels through groups of bagels, allowing easier handling and transportation and more appealing seller displays

DIY Everything but the Bagel Seasoning!
Hey all, I wanted to make my own version of the Everything But the Bagel Seasoning that everyone loves! It turns out that it's super simple and can be made with just a few ingredients. Also, I am fighting a cold for the last week and half which is why my voice sounds pretty terrible. I tried to record this when I felt better, but that was just taking too long. The crust is crispy, the crumb is soft and chewy!
If you do not eat it right away after baking, store in a plastic bag and store in the freezer.

B's (%): 100.0%, Tr (g): 183.7g Strong Flour(Bread Flour)

B's (%): 1.8%, Tr (g): 3.3g Salt
B's (%): 0.5%, Tr (g): 0.9g Instant Dry Yeast
B's (%): 56.0%, Tr (g): 102.9g Water(28°C)
■ Process|room temperature: 24℃

1. Put water in the bowl.
2. Add honey and dissolve in water.
3. Add instant dry yeast and disperse in water.
4. Add salt and dissolve.
5. After adding flour,
Mix evenly until the flour is invisible.
(Dough temperature: 25℃)
6. After 15 minutes of rest, the first fold (folding)
7. After 15 minutes of rest,
Dough division: 100g
8. After rounding the dough, 15 minutes of rest
9. Shaping (see video)
10. After putting the dough into an airtight container,
Fermentation in Room temperature(24℃) : 40 minutes
11. Refrigerated fermentation: 4 ℃, 9 hours
12. Oven temperature 230℃ Preheating
Preheat the lodge in a fully-heated oven for at least 20 minutes.
(Lodge LCC3 Cast Iron Combo Cooker, Pre Seasoned, 3.2-Quart)
13. parboil dough into boiling water
Water: 1000g
Sugar: 50g
Honey: 20g
Put water, sugar, and honey in a pot and boil.
When you start to boil, put the dough and turn it over for about 40 seconds.
14. Remove the dough from the boiling water.
15. Put the dough into the preheated lodge 10-inch combo cooker floor
16. Cover the lid of lodge 10-inch combo cooker.
17. Put it in the oven
18. After 5 minutes, cut off the heat below.
Baking for 15 to 17 minutes in total.
■ Note: Always be careful when using the oven
(It is very hot, so use it after wearing very thick oven gloves)

Lukewarm water 300ml
Sugar 1 tbsp + 3tbsp(for poaching the bagels)
Instant dry active yeast 1 tsp
Plain flour 4 cups or 500g
Salt 2 tsp
Egg white 1
Water 3tbsp
Sesame seeds
Bake in a preheated oven at 180C/350F/Gas mark 4 for 20-25 minutes. Enjoy!
