Healthy Oatmeal Cookies Made With Applesauce | Cookies Without Butter, Low In Sugar And Fat
Let’s make some healthy oatmeal cookies! Are you on a healthy diet and feel like having a snack sometimes? Then let's learn how to make oatmeal cookies. This oatmeal cookie recipe can be made for a great breakfast item or a quick on the go snack.
The base of the cookies are oatmeal which makes it a healthy cookie. Why would I want to make oatmeal cookies you ask? Instead of flour that consists of mainly just carbs, Oats are packed with fiber which makes it a great substitute for a snack. These oatmeal cookies are soft and chewy with nice warm spices.
Oat cookies are not hard to make. These oatmeal cookies don't require any butter so they are low in fat. You can adjust the sweetness of the cookie by adding your desired amount of sugar. Since I wanted a healthy cookie I added limited sugar. You could also use sugar substitutes like Stevia if you prefer.
I will show you the basics on how to make oatmeal cookies from scratch. Feel free to adjust the recipe to your likings and to make it more yummy you can add some of your favorite cookie filling like chocolate, nuts or dried fruit! These cookies are very versatile. Add some Chocolate chips to make chocolate chip oatmeal cookies. Or replace the applesauce with peanut butter to make peanut butter oatmeal cookies!

Applesauce Cookies
These delicious homemade applesauce cookies are a perfect treat! Made with brown sugar, applesauce, spices, and topped with a made from scratch cream cheese frosting, this simple cookie recipe is moist and flavorful.

Ingredients
Cookies:
2½ cups all-purpose flour
1 cup light brown sugar
½ cup unsalted butter room temperature
2 eggs room temperature
¾ cup Musselman's Cinnamon Applesauce
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon apple pie spice blend
½ teaspoon baking soda
½ teaspoon salt
Icing:
8 ounces cream cheese room temperature
1 cup powdered sugar
1 tablespoon half & half (or whole milk)
½ teaspoon vanilla extract
Garnish with a pinch of apple pie spice blend
Instructions
Preheat oven to 350°F. Line a large baking tray with parchment paper or a silicone mat. Set aside.
In a medium-sized bowl stir together the all-purpose flour, baking powder, baking soda, salt, and apple pie spice blend.
In a large mixing bowl, using a handheld mixer on medium-low speed, cream together the butter and light brown sugar for 1 minute or until light and fluffy. Add the eggs, one at a time, until completely incorporated.
Add the vanilla extract and the applesauce and mix for another minute.
At a low speed, combine your flour mixture with your butter mixture for another 1-2 minutes or just until all the flour is incorporated. Do not over mix your batter.
Using a 1½ tablespoon (1.5-inch) cookie scoop, scoop out your batter onto the prepared baking tray 2 inches apart. Bake for 10-12 minutes or just until lightly golden on the edges. Once your cookies have baked, allow them to cool on the tray for 5 minutes then transfer them to a wire rack to cool completely before frosting them.
While your cookies are baking and cooling you can make your frosting. In a medium-sized mixing bowl beat together, on medium speed with a handheld mixer, the softened cream cheese and powdered sugar for 2 minutes. Add the vanilla extract and half & half and combine until smooth. You can add a little more half & half if your mixture is not soft and spreadable but not too much because you want your frosting to hold its shape.
Once your cookies have cooled completely you can frost them with about a tablespoon of the frosting per cookie and sprinkle them with a pinch of the apple pie spice.
Notes
TIP: If your grocery store does not have an apple spice blend you can create your own by combining 1 teaspoon cinnamon, ½ teaspoon ground nutmeg, and ¼ teaspoon ground cloves. Mix well.
TIP: Don’t worry if it looks like your batter is separating because when you add the flour mixture it will come back together.

Recipe: Yield 6-8 cookies
1 C Oats
1/2 C regular applesauce or 3/4 C applesauce if chunky
Added to 2nd batch:
2 T Dried cranberries
1 tsp Chia seeds
Preheat oven to 350 degrees. Mix ingredients well. On a greased baking sheet or parchment paper, squeeze and roll into 2-inch balls, and flatten with your hands or a spatula. Chill in the fridge for 20 minutes to keep the shape. Bake 20-30 minutes (depending on thickness) until toasty edges. Let cool completely. Seal in an airtight container in the fridge for up to 2 weeks or freeze for longer term.

A Chewy Oatmeal Raisin Cookie You're Going to Love
This is my favorite recipe for classic oatmeal raisin cookies! They're richly flavored, perfectly soft and chewy, and SO easy to make--no mixer required!
Recipe:
Ingredients
1 cup unsalted butter, melted and cooled until no longer warm to the touch (226g)
1 cup dark brown sugar, firmly packed (200g)
½ cup granulated sugar (100g)
¾ teaspoon ground cinnamon
2 large eggs, room temperature preferred
1 Tablespoon molasses (use a molasses that says “unsulphured” on the label, I like “Grandmas” and “Brer Rabbit” brand)
1 Tablespoon vanilla extract
2 cups all-purpose flour (250g)
1 Tablespoon cornstarch
1 teaspoon baking soda
¾ teaspoon table salt
3 cups old-fashioned rolled oats (290g)
1 ½ cups raisins (225g)

Instructions

00:20 In a large mixing bowl, combine melted, cooled butter, sugars, and cinnamon and stir until well-combined.
00:57 Add eggs and stir well, then stir in molasses and vanilla extract until completely combined.
01:28 In a separate mixing bowl, whisk together flour, cornstarch, baking soda and salt.

01:58 Add oats and raisins and stir until oats and raisins are uniformly distributed.
02:20 Cover dough with plastic wrap and refrigerate for 30-60 minutes before baking (see note if you would like to chill longer).
02:33 Once dough is nearly finished chilling, preheat oven to 350F (175C) and line a baking sheet with parchment paper.
03:37 Once dough has finished chilling, remove from refrigerator and scoop into rounded 1 1/2-Tablespoon sized scoops. Drop scoops onto prepared baking sheet, spacing cookies at least 2” (5cm) apart.
02:57 Bake on 350F (175C) for 10-12 minutes. The centers will look slightly underbaked still but allow the cookies to cool completely on the baking sheet and they will finish cooking to perfection, leaving you with soft, chewy cookies.
Notes
Making dough in advance
This cookie dough may be made up to 5 days in advance of baking, simply store it tightly covered in the refrigerator until ready to use. Note that the dough becomes quite firm if it sits longer than 1 hour, so you may need to let it sit at room temperature for 15-20 minutes or so before it is easy to scoop. Cookie dough may also be scooped, wrapped tightly, and frozen in an airtight container for up to 3 months.
Storing
Store in an airtight container at room temperature. Cookies will stay fresh for at least 5 days.

Healthy Peanut Butter Oatmeal Cookies - 2 ways

1 Egg
2 tbsp Honey
1/2 cup Peanut Butter
1/2 cup Oats
2nd Method:
1 Egg
2 tbsp Honey
1 cup Peanut Butter
1/2 cup Oats Flour
Directions
1st Method:
Whisk egg, honey and peanut butter.
Once the peanut butter is blended well, add oats and blend well.
Take small amount and give a cookies shape. Place it on baking tray.
Bake in pre-heated oven for 15-20 minutes.
I would suggest to bake 10 minutes and check in between.
2nd Method:
Grind Oats in a blender to make Oats Flour.
Whisk egg, honey and peanut butter.
Once the peanut butter is blended well, add oats flour and blend well.
Take small amount and give a cookies shape. Place it on baking tray.
Bake in pre-heated oven for 20-25 minutes.
I would suggest to bake 10 minutes and check in between.
