Easy Weeknight Apple Cake

A fall classic! This simple to make apple cake is moist, delicious, and doesn't need an icing… though butterscotch sauce is mighty tasty on it. So take a look at how to make apple cake.
Ingredients:
2 cups (500 mL) brown sugar
1 cup (250 mL) butter, room temperature
2 eggs
2 tsp (10 mL) pure vanilla extract
6 apples, grated (24 oz / 750g total weight)
2 tsp (10 mL) baking soda
2 cups (500 mL) all-purpose flour
2 tsp (10 mL) cinnamon
2 tsp (10 mL) ground cloves
1 cup (250 mL) chopped pecans
Homemade butterscotch sauce, for topping

Method:
Preheat oven to 350ºF (180ºC).
In a medium bowl, mix together dry ingredients.
In a large bowl, cream together the butter and sugar.
Add the eggs and mix well.
Stir in the vanilla.
Stir in the freshly grated apple.
Stir in the pecans.
Add the flour mixture to the wet ingredients and mix, just until incorporated.
Bake in a greased 9×13 baking dish for 50 - 60 minutes, or until a toothpick comes out clean.
Allow to cool for at least 10 minutes.
Serve warm with butterscotch sauce or ice cream.

Applesauce Cake with Caramel Frosting

I always go back to simple recipes that have been used by my family for years. This applesauce cake was my grandma's recipe: a simple snack cake that can be stirred together in one bowl. Perfectly spiced for autumn, this is a weekend cake that's so good you can entertain with it!

INGREDIENTS:
For the applesauce cake:
- ½ cup butter, room temperature
- 1 cup sugar
- ½ cup dark brown sugar, lightly packed
- 2 eggs
- 1 ½ cups applesauce
- 2 cups all-purpose flour
- ¼ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- 1 tsp salt
For the caramel frosting:
- ¼ cup butter
- ½ cup dark brown sugar, lightly packed
- ¼ cup whole milk
- 1 tsp vanilla extract
- 1 cup powdered sugar, sifted
- ¾ cup walnuts, toasted and chopped
INSTRUCTIONS
For the applesauce cake:
Preheat oven to 350°F.
Grease a 9×9 cake pan with nonstick spray. Line with parchment and spray again. Then set aside.
In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 3 minutes.
Add the eggs one at a time, mixing in between each until incorporated.
Mix in applesauce. The batter will seem very loose and curdled, but that is completely normal.
Add the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and salt. Mix until just combined, 2 minutes.
Remove bowl from the mixture and use a spatula to scrape the bottom of the bowl, ensuring the batter was mixed evenly.
Pour into prepared pan and bake until a toothpick or skewer inserted into the middle comes out clean, about 35-45 minutes. While the cake is cooling, make the frosting.
For the frosting:
In a 4-quart saucepan, combine the butter, brown sugar, and milk. Melt on medium-low heat, stirring occasionally. Continue to cook until the mixture begins to boil and boil lightly for 2 minutes. Remove from heat and cool for 10-15 minutes.
Add vanilla and sugar. Whisk until smooth and thick.
Once the cake is completely cool, frost the cake. Sprinkle with toasted walnuts if desired.
NOTES
To maintain freshness, this cake freezes well in an airtight container up to one month.

Apple Cake For Two
Sometimes an entire cake is a bit much - So here is our 'Apple Cake For Two Recipe' - just enough for a taste, and not so much that you're eating it all week. Or feeling horrible because you ate a full-size cake in one sitting.
Yields 1 6 cake.
Ingredients:
60 mL (¼ cup) butter, melted
125 mL (½ cup) sugar mix white & brown
1 large egg
2 mL (½ tsp) cinnamon
1 mL (¼ tsp) cloves
1 mL (¼ tsp) allspice
2 mL (½ tsp) pure vanilla extract
125 mL (½ cup) packed grated apple (from 1 - small apple)
125 mL (½ cup) all-purpose flour
2 mL (½ tsp) baking powder
2 mL (½ tsp) salt
60 mL (¼ cup) chopped pecans, optional
Method:
Preheat the oven to 350°F (180ºC).
Grease a 6 square or round cake pan with butter.
Beat together the butter and sugar.
Add the egg, cinnamon, cloves, allspice and vanilla and beat another minute.
Grate in the apple and beat until well combined.
Combine the flour, salt and baking powder then stir into the apple mixture until just combined.
Do not overmix.
Stir in the pecans at this point.
Pour the batter into the pan, and bake for about 40 minutes.
Moist crumbs on a toothpick inserted in the middle indicate done.
Allow the cake to cool completely on a wire rack.

Applesauce Cake - Vintage Recipe
In this episode I make an applesauce cake that can easily be turned into a Christmas fruitcake. The recipe is from a 1940s vintage family cookbook. Come and sit a spell with me as a I reminisce about the past and enjoy a wonderful cake.
Applesauce cake – Anna Peterson, Bantry, ND
1 cup sugar
½ cup shortening
Pinch of salt
Pinch of nutmeg
1 tsp soda
1 tsp cloves
1 tsp cinnamon
1 cup applesauce
½ cup raisins
2 cups flour
Mix sugar and shortening. Add spices. Dissolve soda in a little hot water and stir into applesauce then add this to the first mixture. Add 2 cups of flour and beat thoroughly. Bake in a grease cast iron frying pan. Line bottom with parchment or wax paper. Back at 350 degrees for 40-45 minutes. Can also be made in a regular cake pan or loaf pan.
Frost with a brown sugar or chocolate frosting. It is also good without frosting.
To make into a fruitcake add candied fruit and nuts or golden raisins and dried cherries with nuts. You can also soak your raisins in spiced rum for a kick!

This is from a recipe with no name... just a list of ingredients handwritten on the back cover of a 1929 recipe book. No name, no info, no method, nothing - just a list of ingredients that turned out to be a great cake!
Ingredients:
½ cup butter
1 cup sugar
2 eggs
1 cup dates (chopped)
1 cup raisins
1 cup nut meats
2 cups apple sauce
¼ tsp cloves
¼ tsp cinnamon
2 cups flour
2 level tsp soda
Method:
Pre heat oven to 350ºF.
Cream together butter and sugar.
Cream in eggs one at a time.
In a small bowl mix together dry ingredients; flour, soda, and spices.
Alternate mixing dry ingredients and apple sauce into the creamed butter and sugar.
Once mixed, add in the fruit and nuts.
Bake in a greased 9x9 or 8x8 cake pan for 35 - 40 minutes or until a tester comes out clean.

In a large bowl combine:
2 1/2 cups flour
2 cups white sugar
1 1/2 tsp cinnamon
1 1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp ground cloves
1/4 tsp salt
In a medium bowl combine:
2 eggs
1/2 cup vegetable oil
1/2 cup water
1 1/2 cups unsweetened applesauce
Mix the dry and wet ingredients together. Put batter in a well greased 9 x 13 pan. Mix together:
1 TBS white sugar
1/4 tsp cinnamon
Sprinkle over the cake batter. Bake in a preheated 350 degree oven for 25 - 35 minutes until toothpick inserted comes out clean.
Cool for 20 minutes and serve! You can top with whipped cream, confectionary sugar, ice cream or frosting!
