How To make Apple Spice High Rise Muffins (Low Fat)

flour

baking powder

baking soda

teaspoon
cinnamon

teaspoon
nutmeg

teaspoon
allspice
1/2
teaspoon
salt
1 1/2
cup
brown sugar

egg whites
1
cup
yogurt, plain
1/3
cup
oil, OR 1/3 cup applesauce
3
each
apples, peeled, finely chopped
Directions:
Preheat oven to 400 degrees F. Grease 12 muffin cups. Using a fork stir flour with baking powder, baking soda, spices, salt and sugar in large mixing bowl. In another bowl whisk eggs with yogurt and oil. Stir in apples and nuts. Spoon batter into muffin cups. Cups will be very full with batter heaped in middle. Bake 15-17 minutes. Leave in pan 5 minutes and then turn out.

** Bake @ 325°F for 60 minutes if using a silicone pan. A metal pan should need around 35-45 minutes because it conducts more heat than silicone. If a toothpick comes out the center clean, it’s done.

Add any toppings you like!
PLEASE NOTE: If you put the dough in the fridge overnight, the next day allow the dough to rise in the tray for 2 hours at room temperature ( cold dough needs extra time to rise in the tray). Then dimple, add the toppings and bake.
