How To make Chunky Apple Spice Muffins
1 c Whole wheat flour
1 c Oat bran
2 ts Baking powder
1/2 ts Allspice
2 ts Cinnamon
1/4 ts Ground cloves
1/4 ts Ginger
1 t Arrowroot
1/4 c Liquid sweetener
1/2 c Unsweetened applesauce
2 ea Tart apples, peeled & diced
1/2 c Water
1/2 ts Vanilla extract
Preheat the oven 400F. Mix the dry ingredients and wet ingredients separately. Combine them and mix thoroughly. Spoon into nonstick muffin tins and bake for about 25 mins, until golden brown on top. "The McDougall Plan" by John McDougall Typed by Lisa Greenwood

Applesauce Cranberry Muffins - Cavalcade at Home
We got hit with about 6+ inches of snow on this Michigan morning. My neighbor across the street was the first one out (as usual!) with his snow blower helping to clear the driveways. After the snow was moved and I warmed up inside for a little bit, I wanted to make some muffins for my neighbor as a thank you for his help.
2 eggs
1/3 cup brown sugar (packed)
1/2 cup oil
1 cup applesauce
1/2 dried cranberries (you can also use raisins or other dried fruits)
1 3/4 cup flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
Preheat oven to 400 degrees.
In a large bowl, combine eggs (beat first), brown sugar, oil, applesauce, and cranberries. Set aside.
In a small bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg.
Add dry ingredients to wet ingredients and fold together until just mixed.
Line a 12 muffin/cupcake pan with paper liners (or grease if not using paper liners) and fill each about 80 percent full with batter. You should use all the batter for the 12 muffins.
Bake at 400 degrees for 20-25 minutes until muffins are golden brown and test done with a toothpick inserted into the center coming out dry.
Remove from muffin pan and allow to cool. Enjoy!

Healthy Cinnamon Apple Muffins
Ingredients:
1 apple, chopped reserve 1/3 for later
1 1/2 cups oats you can choose gluten free oats
1/2 cup coconut sugar
1/2 cup applesauce
1/3 cup oil
1/4 tsp stevia
1 ripe banana
1 Tbsp arrowroot powder or cornstarch
1 chia egg
1 Tbsp baking powder
1 tsp cinnamon
1 pinch salt
1/4 cup walnuts, chopped (optional)
Directions:
Preheat the oven to 350 degrees and spray a 24 mini muffin tin with oil.
Blend oats until they look like fine flour, 1-3 minutes.
Remove oats and set aside. Add the remaining ingredients (except 1/3 apple and walnuts) and blend until smooth.
Add oat flour and blend until smooth.
Stir in remaining chopped apple and walnuts. Pour into mini muffin tin and bake approximately 12 minutes or until a toothpick inserted into the center comes out clean.

APPLE CINNAMON PROTEIN MUFFIN RECIPE
2 cups rolled oats
1 apple, diced
2 scoops vanilla protein powder (I used whey)
4 egg whites
1 cup of non-fat Greek yogurt
2tbsp. turbinado sugar
2 tsp. cinnamon
½ tsp. baking powder
Pinch of kosher salt
Directions:
Pre-heat oven to 350
Prepare a muffin pan by either brushing with each with a little coconut oil or spraying with some cooking spray.
Combine all the ingredients in a large bowl and mix well. Once everything is combined, divide evenly amongst 12-muffins.
Bake for 18-20 minutes. Let cool and enjoy!
Makes 12 muffins.

Homemade Applesauce Cake Recipe

In a large bowl combine:
2 1/2 cups flour
2 cups white sugar
1 1/2 tsp cinnamon
1 1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp ground cloves
1/4 tsp salt
In a medium bowl combine:
2 eggs
1/2 cup vegetable oil
1/2 cup water
1 1/2 cups unsweetened applesauce
Mix the dry and wet ingredients together. Put batter in a well greased 9 x 13 pan. Mix together:
1 TBS white sugar
1/4 tsp cinnamon
Sprinkle over the cake batter. Bake in a preheated 350 degree oven for 25 - 35 minutes until toothpick inserted comes out clean.
Cool for 20 minutes and serve! You can top with whipped cream, confectionary sugar, ice cream or frosting!
