2 lb Apples
2 lb Quinces
Sugar Wash apples. Remove stems, seeds, and blossom ends. Do not pare. Cut in quarters. Cover with water. Cook until very soft. Drain through jelly bag. Wash quinces. Remove stems, seeds, and blossom ends. Do not pare. Cut in small pieces. Cover with water. Cook slowly until very soft. Drain through jelly bag. Combine apple and quince juice in equal proportions. Use 2/3 cup sugar for each cup juice. Boil rapidly until jelly sheets from

Spanish Quince jelly
My family has a house in the mountains near Madrid and it is where we all congregate every Christmas. We are completely spoiled in that you only have to walk out of the house to come across wonderful natural ingredients: mushrooms, asparagus, thistles, game, fish, nuts, wild fruits and berries. As you may well imagine I’m very used to cooking with all of these wild ingredients and Christmas is a great time for making preserves for the year ahead which are shared between all the family members. So, back to the point, here is my foolproof recipe for quince jelly.

Quince Jam - two ways??
This year I got more quince than usual and made lots of delicious recipes with this fragrant fruit. Growing up my mom always made us quince jam two ways, as chunks perfect as a dessert served with yoghurt, or grated so that it could be easily spread on toast. I love serving the second variation on my cheese board and it is simply incredible with any of your favourite cheese.

About 1 kg. (5 big quince)
2 cups water
4 cups sugar
2 tbsp lemon juice
(1/4 tsp citric acid) I use it when the lemons don't have enough acidity.
