How To make Apple Oat Peanut Butter Cookies
1 c All-purpose flour
1 c Whole wheat flour
2 ts Baking soda
3/4 c Reduced fat creamy peanut
-butter 1/4 c Butter or margarine
3/4 c Granulated sugar
3/4 c Brown sugar, packed
1/2 c Frozen egg substitute;
-thawed
or 1 egg and 2 egg whites :
slightly beaten 1 ts Vanilla extract
1 c Rolled oats; quick-cooking
1 md Apple; finely chopped
Recipe by: Midwest Living, April 1995 Preheat oven to 375 degrees. In a mixing bowl, combine the flours and baking soda; set aside. In a larger bowl, beat the peanut butter and butter with an electric mixer on medium speed for about 30 seconds. Add the sugars; beat until fluffy. Add the egg product and vanilla extract; beat until mixed. Beat or stir in the flour mixture. Stir in the oats and chopped apple. Shape the dough int 1 1/2-inch balls; place 2 inches apart on ungreased cookie sheets. Flatten the dough slightly with the tines of a fork. Bake for 10 to 12 minutes, or until the edges of the cookies are firm. Remove the cookies to cool on a wire rack. Penny Halsey (ATBN65B). 4-INGREDIENT BANANA OATMEAL BREAKFAST COOKIES
2 large brown bananas or 3 small (14-16 ounces)
1/2 cup all-natural creamy peanut butter
2 cups rolled oats (160 grams)
1/3 cup chocolate chips
Preheat oven to 350 F. Line a rimmed baking sheet with parchment paper or a Silpat mat and set aside. Mash bananas in a medium bowl using the back of a fork. Break them up until they are like a banana puree.
Add in the peanut butter and stir until well combined.
Stir in the oats and mix until everything is incorporated and then gently fold in the chocolate chips.
Scoop 1 tablespoon of dough into your palms and shape it into a cookie. Place on baking sheet and repeat. Note: the cookies don’t spread when baking, so you want to shape them into a cookie now.
Bake for 10 minutes or until lightly browned and set though. Repeat with extra batter, cool, and enjoy!
NOTES:
Storage: Keep cookies stored in an airtight container in the refrigerator for up to five days.
Freezing Instructions: Cookies can be frozen for up to 3 months, then thawed overnight in the refrigerator before enjoying.

PEANUT BUTTER COOKIE RECIPE
(makes 12 cookies)
Ingredients:
1/2 cup natural peanut butter (125g)
1/4 cup honey or agave (60ml)
1/4 cup unsweetened applesauce (65g)
1 cup ground oats or oat flour (100g)
1.5 tbsp cornstarch or tapioca starch
1 tsp baking powder
NUTRITIONAL INFO (per cookie):
107 calories, fat 2.3g, carb 19.9g, protein 2.4g
Preparation:
In a bowl, add room temperature peanut butter, your sweetener and applesauce, beat with the mixer for 1 minute.
Add half of the oats, cornstarch and baking powder, and gently mix it in, until the dough starts to form.
Add the rest of the oats and mix until everything comes together.
If the dough is too sticky to work with, place the cookie dough in the freezer for 5 minutes.
Scoop the cookie dough (35-40 grams) and roll with your hands, you'll end up with 12 equal balls.
Flatten a bit and transfer to a lined baking tray.
Using a fork, press down each cookie to create authentic criss cross marks.
Bake cookies at 350F (180C) for 10 minutes.
Let it cool on a baking sheet for 10 minutes, then transfer to a wire rack.
When completely cool, serve and enjoy with your favorite milk.
