2 INGREDIENT APPLE OATMEAL COOKIES-* NO FLOUR, EGGS, DAIRY OR ADDED SUGAR*
Hello everyone. Thank you for joining me while I make these wonderful cookies. They are easy to make with just two ingredients apple sauce and oats. You can add chocolate chips, nuts, coconut, or cranberries. No flour, added sugar, dairy or eggs. I hope you enjoy these guilt free treats.
Recipe:
2 cups of Oats
1 cup of unsweetened applesauce
Optional:
nuts, chocolate chips, coconut and cranberries
Divide cookie dough and shape into desired size. Place cookies on a cookie sheet lined with parchment paper. These cookies will not expand so the shape you put on the cookie tray will be the shape of the finished cookie. Bake at 350 for 15-16 minutes. Let cool for 10 minutes, plate and enjoy.
No Bake Peanut Butter Cookies
A new variation of the classic no bake cookie: Peanut Butter No Bakes! These are all peanut butter without any chocolate - they're so easy and don't need an oven. They've been called the BEST cookies EVER by tasters!

INGREDIENTS
½ cup (113g) unsalted butter diced
1 ¾ cups (350g) granulated sugar
½ cup (118ml) nonfat milk
½ cup (133g) creamy peanut butter
1 teaspoon vanilla extract
¼ teaspoon salt
3 cups (243g) quick cooking oats
INSTRUCTIONS
Line two cookie sheets with parchment paper.
It’s very important that all your ingredients are measured and ready to go before you start and make sure you’ve read the directions before making these cookies. The process goes fast!
Melt the butter in a 3-quart saucepan over medium heat. Stir in the sugar and milk. Whisk until smooth then bring to a boil and cook for about 1 ½ minutes, stirring occasionally. NOTE: you MUST boil them long enough or they will not set. To be sure of this, boil the mixture until it reaches 230°F on a candy or instant read thermometer. If you do not have a thermometer, this will take about 1 ½ minutes on medium heat.
Remove from heat and stir in peanut butter, salt, vanilla, and oats.
Use a cookie scoop to drop 2 tablespoon size balls of cookie mixture onto the prepared baking sheets. Let sit to set or chill to harden quicker.

Peanut Butter Protein Bites
Here is what you'll need!
RECIPE:
Yields: 16-18 balls
INGREDIENTS
2/3 cup creamy peanut butter
1 cup old fashioned oats, plus extra for rolling
1 1/2 tablespoons honey
1/4 cup miniature chocolate chips, plus extra for rolling
1/4 cup flax seeds (optional)
PREPARATION
Mix all ingredients in a bowl until well-combined.
Cover with plastic wrap and chill in the refrigerator for at least 30 minutes
Once done chilling, roll into approximately 1 inch balls. (Cover hands in a light layer of butter or oil to facilitate rolling and avoid getting sticky hands.)
Lay out a thin layer of oats and chocolate chips on a cutting board or work surface and roll the balls in the mixture. Finish off by rolling each ball between your hands to pack in the oats and chocolate chips.
Store in the refrigerator until ready to be eaten. Enjoy!

HEALTHY OATMEAL BARS RECIPE
Ingredients:
1.5 cups ground oats (or oat flour) (150g)
1 cup old-fashioned oats (or quick oats) (90g)
2 tsp baking powder
2 tsp cinnamon
1 cup applesauce (255g)
1/2 cup honey (170g)
1/3 cup peanut butter (smooth or crunchy) (85g)
1 cup grated apples (150g)
1 apple, peeled and sliced
Preparation:
In a large bowl, combine dry ingredients, ground oats, old-fashioned oats, baking powder and cinnamon.
In another bowl, add your applesauce, honey and melted peanut butter. Stir in the grated apples.
Pour dry ingredients into the wet ingredients, mixing together to combine. Do not over mix the batter.
In a lined baking pan spread 2/3 of the oat mixture. Press well using the back of the spoon.
Layer the sliced apples over the oats and spread evenly.
Spoon the remaining oat mixture over the apples, lightly pushing into the top.
Bake at 350F (180C) degrees for 20-25 minutes, depending on how crunchy you like your apples. Let it cool for 15 minutes.
Cut in squares or bars.
Enjoy!
