Crunchy Chocolate Almond Cookies | Espresso & Cloves | Nonna Says Mangia Castagnelle
The most sought after recipe of all the Italian Christmas Cookies - Nonna shows you how to make the original recipe handed down through many generations. Castagnelle are the crunchiest most delicious chocolate almond cookie you have ever laid your taste buds on! A symphony of ingredients come together creating the most unique and incredibly yummy cookie ever, its not Christmas without Castagnelle Cookies - one of Santa's favorites as well.
INGREDIENTS
Egg, 1
Coarsely Chopped Roasted Almonds, 2 cups
All Purpose Flour, 8 ounces
Sugar, 8 ounces
Espresso Coffee, 6 ounces
Unsweetened Cocoa, 8 ounces
Vanilla Extract, 1 teaspoon
Brandy, 1 ounce
Almond Extract, 1 tablespoon
Ground Cloves, 1/4 teaspoon
Baking Powder, 1 teaspoon
Cinnamon, 1 Teaspoon
Zest of one Lemon
For the delicious icing; 3 cups of icing sugar and the Juice of one lemon, use the one from the zest step!
DIRECTIONS
in a large bowl add the egg, sugar and some coffee; beat with a whisk for a minute
Start adding in the flour a little at the time while mixing
Add the cocoa and the rest of the espresso, mix mix
Mix in the roasted almonds, mix mix
Add the zest of the lemon and the rum, mix mix
Add the almond extract, cinnamon, cloves and baking powder, mix mix until well combined
Pour the mixture onto the counter and work the dough a bit
Form logs, then cut the logs into cookie size diagonal pieces (watch how Nonna does it!)
PRO TIP! If it gets sticky when cutting, just add some flour to your cutting utensil like Nonna does
Place the Cookies on parchment lined baking sheet and bake them at 350º for 12 minutes
Let the cookies cool completely, then cover in the lemon icing and place on a rack to dry (Watch how Nonna makes her icing and quickly applies it to the cookies in one batch, so easy!)
Let the icing dry and Mangia!

These cookies are sweet, spicy & absolutely delicious!
The perfect blend of coffee and warm spices makes them ideal for any fall reunion or to pair up with a big cup of hearty tea or coffee.
Try them out, you won't regret it!
Ingredients (makes aprox. 20 cookies)
- 75g butter
- 60g white sugar
- 50g brown sugar
- 1 egg
- 170g all purpose flour
- 1tsp salt
- 1/2 tsp baking soda
- 1tsp ground cinnamon
- 1/2 tsp freshly grated ginger
- 1/2 tsp ground coffee
- 75g sliced almonds
Bake at a preheated 180C/350F oven for 10m.

How To Make Gevulde Koeken: Almond Filled Cookies with Homemade Almond Paste
Learn to make Gevulde Koeken: Dutch Almond Filled cookies, with homemade almond paste from scratch! Buttery goodness, slight savoriness, and a nice balanced sweetness, these large cookies have it all!! These pastries have been around since the 16th century; they used to go by names as gevuld heertje (filled little lord) or gevulde herenkoek (filled lord's cookie) because almonds were (back then) a luxury that only the aristocracy or wealth people could afford. The almond flavor from the filling is great, and the buttery dough around it just compliments it!
The almond paste will take some time in the fridge to develop its flavor, so I recommend doing that a few days before. Also, it makes about twice as much as the gevulde koeken need, so you'll be able to freeze the rest.
The Dutch are crazy about almonds, three of my previous videos where we bake sweets have almonds in them, or it's a common variation.
