How To make Almond Poppy Cake
3 cups flour
2 cups white sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 1/2 cup salted butter -- softened
1/2 cup sour cream
2 large eggs
1/3 cup Amaretto or almond liqueur
1/3 cup poppy seeds
Topping: 1/4 cup confectioners' sugar
Preheat oven to 350. Grease and flour 2 loaf pans. In a large bowl, with an electric mixer, blend flour, sugar, salt and baking powder on low until all ingredients are well mixed. Add butter, sour cream, and 3 eggs. Mix on medium until dry ingredients are moistened and beat on high 2 minutes then scrape bowl. Add remaining 3 eggs, one at a time, alternating with amaretto. Beat well after each addition. Blend in poppy seeds on low speed. Pour batter into prepared pan and bake 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes and invert cake onto a rack to cool. When cake has cooled completely, lightly dust top with confectioners' sugar.

Ingredients:
For the dough:
2 cups (250g) Flour
1/2 cup (115g) Butter
1/2 cup (100g) Sugar
1/4 teaspoon Salt
For the filling:
750ml Milk
1 cup (250g) Ricotta cheese
7 tablespoons (100g) Butter
3/4 cup (150g) Sugar
1 cup + 1 Tbsp (150g) Poppy seeds
1 cup (140g) Semolina
1 teaspoon Vanilla extract
1 Egg
1/4 teaspoon Salt
Directions:
1. Preheat oven to 350F (175C).
2. Make the dough: in a food processor place flour, sugar and salt. Pulse until combined. add butter and process until crumbs are formed. Press 2/3 of the mixture into bottom of 9-inch (23cm) springform pan. Refrigerate while making the filling.
3. Make the filling: place milk, butter and sugar to a saucepan. Heat until butter is melted and sugar dissolves, bring to a boil.
4. When the mixture begins to boil, gradually add semolina, stirring constantly. Add poppy seeds. Keep stirring until the mixture thickens. set aside to cool.
5. In a large bowl beat ricotta cheese, vanilla extract and egg until creamy and smooth. Add chilled poppy seed mixture to the cheese mixture and stir until combined and smooth.
6. Pour the filling over the chilled crust, then spread the remaining dough on top.
7. Bake for 50-60 minutes, until golden. Remove from oven, let cool completely in the pan, then refrigerate for at least 1 hour.
Notes:
• Instead of ricotta cheese you can use cottage cheese/cream cheese or any other soft cheese.
• To the filling you can add raisins and walnuts.

Almond Poppy Seed Bundt Cake
3 eggs
2 C granulated sugar
3 C all-purpose flour
1/2 tsp salt
1/2 Tbsp baking powder
1/2 Tbsp vanilla
1/2 Tbsp almond extract
1 tsp butter emulsion
1 1/2 C whole milk
1 C olive oil
1-2 Tbsp poppy seeds
Frosting
8 oz full fat cream cheese
4 Tbsp Butter
1/2 Tbsp clear vanilla
2 1/2 C Powdered Sugar
1/2 Tbsp heavy whipping cream depending on how soft you want your frosting
Cake
preheat oven to 350
hand whisk the eggs and sugar
add the flour, baking powder and salt and beat
add the vanilla, almond extract, butter emulsion, milk and oil and beat until smooth
add the poppy seeds and fold in
pour into a well greased (I like bakers joy) bundt pan and bake at 350 for 40-50 mins
invert pan and let cool on cooling rack - you can frost warm and the frosting will get soft and drippy and make a mess but also soak in a little - or let it cook so the frosting stays on top - I picked the middle - I frosted while it was still warm, but not hot
Frosting
beat the cream cheese, butter and clear vanilla together until fluffy
add the powdered sugar and beat until smooth and slightly thick
add the heavy cream - a tsp at a time and beat until the desired consistency is achieved
frost the cake and enjoy!

Almond Poppy Seed Muffins Recipe | The Sweetest Journey
How to make soft muffins with almonds and poppy seeds for a great breakfast pastry.
Ingredients:
2 Cups All Purpose Flour (272g)
3 Teaspoons Baking Powder (15g)
1/4 Teaspoon Salt (1.5g)
¾ Cup Softened Butter (168g)
¾ Cup Sugar (144g)
5 Tablespoons Plain Yogurt (70g)
2 Eggs
2 Teaspoons Almond Extract (10ml)
2 Tablespoons Poppy Seeds (17.6g)
1/2 Cup Sliced Almonds (42g)
Directions:
1. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the yogurt, mixing just until combined. Add the eggs and almond extract; beat until well combined. Gradually add the flour mixture in 2 additions, mixing just until smooth and well combined. Fold in the poppy seeds.
2. Line a muffin tin with paper liners. Fill each liner cup ¾ full with batter. Sprinkle tops with the sliced almonds. Bake in a preheated oven at 350F for 25-30 minutes or until an inserted toothpick comes out clean and the tops are golden brown. Remove from pan and let cool completely on a wire rack.
