How To make Almond Butter Christmas Cake
Ingredients

cup
cake flour, sifted
3
teaspoon
baking powder
1/2
teaspoon
salt

cup
butter, or shortening
1 1/2
cup
sugar
3
each
eggs, unbeaten
1/2
cup
almonds, finely chopped
1/2
cup
raisins, finely cut
1
cup
milk
1
teaspoon
vanilla
Directions:
Sift flour once, measure, add baking powder and salt, and sift together three times. Cream butter thoroughly. Add sugar gradually, and cream together until light and fluffy. Add eggs, one at a time, beating thoroughly after each. Add nuts and raisins and beat well. Add flour, alternately with milk, a small amount at a time, beating after each addition until smooth. Add vanilla.
Bake in two greased 9-inch layer pans in moderate oven (375 degrees F.) 25 minutes, or until done. Spread Boiled Frosting (see recipe) between layers and on top and sides of cake. Decorate top of cake with wreath of holly, using pieces of maraschino cherries or red cinnamon candies for berries, and slices of angelica or citron for leaves and stems. Or decorate with poinsettias made of candied cherries. Slice cherries in rings, cut rings in half, and arrange to form petals of poinsettias. If desired, Lemon butter Frosting (see recipe) may be used.
Boiled Frosting :
1/2 c water
1/3 c light corn syrup
2 1/2 c sugar
2 ea egg whites, large
1 1/2 ts vanilla
Combine water, corn syrup and sugar in a medium saucepan. Heat to boiling; boil until the mixture thickens and forms a ball when a small spoonful is dropped into cold water (about 240F on a candy thermometer).
Beat the egg whites in a large bowl of the electric mixer until stiff. Slowly beat in the hot syrup. Combine to beat until spreading consistency. Beat in vanilla.
Lemon butter Frosting :
4 tb butter
3 c confectioner's sugar
2 tb lemon juice
2 tb water
In bowl combine butter, sugar, lemon juice and enough water for spreading consistency; beat well.

However when making this recipe it is vital to make a true Frangipane and not an almond cream (creme d'amande) which many people seems to do nowadays. An authentic Frangipane is made with a pastry cream mixed with almond cream. Only that combination will provide you with the true taste of the cake filling that you may have tasted back in France.

Bahan-bahan:
250g mentega (atau boleh guna marjerin)
140g gula aising / 200g gula kastor
225g tepung kek / tepung gandum
90g serbuk badam
4 biji telur (gred A)
4 sb susu segar / cair
50g kepingan badam untuk tabur atas kek (jika perlu)
1 1/2 sk serbuk penaik
1 sk esen vanilla / badam (sy rekemon vanilla)
*boleh juga tepung naik sendiri (tak perlu guna serbuk penaik)

Ingredients:
250g butter salted (or unsalted)
140g icing sugar /200g caster sugar
225g cake flour / all purpose flour
90g almond powder/meal
4 eggs (large size)
4 tbsp fresh / evaporated milk
50g almond flakes (optional)
1 1/2 tsp baking powder
1 tsp vanilla or almond essence (I used almond, but I recommend vanilla)
*You can use self raising flour too (no need to add baking powder)

Almond Butter, Banana & Dark Chocolate Chip Cookie Recipe
1 cup mashed ripe bananas, about 1.5 large banana
2 tablespoons almond butter
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon ground cinnamon
Pinch of Sea Salt
1 ¼ cup almond flour
¼ cup Dark Chocolate Chips OR Chunks
Directions:
Start by preheat oven to 350 degrees and lining a baking sheet with parchment paper.
Blend together the banana, almond butter, vanilla extract, baking soda, cinnamon, and salt in a bowl with a hand mixer. Then fold in the almond flour followed by the chocolate chips.
Spoon dough into even scoops on baking sheet. Bake for 11-14 minutes (don't forget to set a timer) Cookies should be slightly golden on top. Remove from oven, allow to cool and enjoy!

Panforte means a ‘strong cake’, a beautiful cake that’s more like a candy, made with lots and lot of fruits and nuts, and sweetened with the goodness of honey ???? is super easy to make
.
The recipe goes back to like 1000-1500 years back. Apparently it was found scribbled on a piece of paper from that era in Siena
.
When I visited Siena, as I roamed the streets, I could see packets and packets of this cake. Some made with almonds, some with chocolate and so many varieties. I talked to a shop keeper and got this recipe
.
3/4 cup whole almonds roasted (100 grams)
3/4 cup whole hazelnuts roasted(100 grams)
1 1/2 cups candied fruit** (300 grams)
1/4 cup +3 tablespoons honey (160 grams)
1 tablespoon water
1 cup + 3Tbsp granulated sugar (130 grams)
1 cup + 3 Tbsp all purpose flour (160 grams)
1 teaspoon cinnamon
3/4 teaspoon coriander powder
3/4 teaspoon ground cloves
3/4 teaspoon nutmeg
1 tablespoon powdered / icing sugar

Almond Butter Cake / Butterkuchen (german style)
Ingredients:
20 g fresh yeast or 1 pack dry yeast
65 g sugar
100 ml lukewarm milk
260 g flour
40 g butter, melted
vanilla paste
pinch of salt
Toppings:
75 g cold butter, diced cut
40 g sliced almond
30 g sugar
100 ml cream
Bake at 190°C (top and bottom heat) for about 20 minutes.
