Resep Ayam Panggang Madu (untuk 7-8 porsi)
Bahan marinasi:
1 ekor ayam negeri (berat 1,2 kg)
1 buah jeruk nipis
5 siung bawang putih
1 jempol jahe
2 sdm saus tiram
2 sdm kecap asin
1 sdm gula palem
1 sdm kaldu ayam bubuk
½ sdt merica
½ sdt bubuk ngohiong
1 sdm minyak wijen
¼ sdt pewarna makanan merah (opsional)
Bahan olesan:
4 sdm madu
1 sdt minyak wijen
2 sdt kecap asin
Langkah:
1. Iris besar jahe dan bawang putih
2. Di dalam mangkuk, marinasi ayam dengan perasan jeruk nipis, bawang putih, jahe, kecap asin, saus tiram, gula palem, merica, kaldu ayam bubuk, bubuk ngohiong, minyak wijen, dan sedikit pewarna merah, aduk rata
3. Tutup dengan cling wrap sambal di tekan-tekan lalu diamkan di kulkas semalaman
4. Keringkan ayam lalu tusukan tongkat rotisserie lalu jepitkan penjepit hingga kencang
5. Ikat bagian paha ayam dengan tali lalu masukkan ke dalam panggangan. Panggang selama 60 menit. Untuk api bawah memakai api besar untuk api atas pakai api kecil atau jika menggunakan oven di suhu 180 derajat celcius
6. Untuk saus cocolan, campurkan madu, minyak wijen, dan kecap asin, aduk rata
7. Setelah 40 menit, oles ayam dengan olesan lalu panggang kembali
8. Sebelum dipotong diistirahatkan ayam selama 15 menit
9. Ayam panggang madu siap disajikan

Honey Roasted Chicken Recipe (yield 7-8 servings)
Marinade ingredients:
1 pc broiler (1.2 kg)
1 pc lime
5 clove garlic
1 thumb ginger
2 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp palm sugar
1 tbsp chicken powder
½ tsp pepper
½ tsp five-spice powder
1 tbsp sesame oil
¼ tsp red food coloring (optional)
Sauce ingredients:
4 tbsp honey
1 tsp sesame oil
2 tsp soy sauce
Steps:
1. Slice the ginger and garlic into large pieces.
2. In a bowl, marinate the chicken with lime juice, garlic, ginger, soy sauce, oyster sauce, palm sugar, pepper, chicken powder, five-spice powder, sesame oil, and a bit of red food coloring. Mix well.
3. Cover it with plastic wrap and press it down. Marinate overnight in the fridge.
4. Pat the chicken dry, then pierce it with the rotisserie stick. Clip the chicken tightly.
5. Tie the thighs together with a twine, then roast it for 60 minutes. Use high heat at the bottom and low heat at the top. If you use an oven, set it to 180°C.
6. For the Sauce, combine honey, sesame oil, and soy sauce. Mix well.
7. After 40 minutes, brush the chicken with the sauce. Roast it again.
8. Before carving, rest the chicken for 15 minutes.
9. Honey Roasted Chicken is ready to serve.

Indonesian Spicy Chicken | Ayam Rica | This is so delicious! Original grandma recipe!
This hot and spicy chicken will definitely raise your appetite!
You can serve this meal with steamed white rice. Leave it in the fridge overnight even to enhance the taste the next day.
If you love hot and spicy food, add more chilies. Or, add more tomatoes and just one chili for a milder taste.
Here are the ingredients:
- Whole chicken
- Onion
- 5-6 garlic cloves
- 3-4 fresh chilies
- 1 tomato
- 1 tsp lemongrass paste
- 1 tsp kaffir lime leaves
- 3-4 bay leaves
- 1 tsp ginger powder
- 1 tsp turmeric powder
- 1/2 tsp sugar
- 1/2 tsp salt

Today we're making Rica-Rica Chicken, or Ayam Rica Rica, spicy Indonesian braised chicken. Besides having a super fun name, this fragrant dish is easy to make, and my recipe is not the spiciest out there - great for spice beginners.
Adjust red chillies and Thai Bird's Eye Chillies according to spice tolerance. Spice lovers can go for a 10:10 ratio. Spoiler: The ingredient to help with the spice is a tomato. Typically it is not used, so for those with higher spice tolerance, feel free to skip this ingredient.
Marinating the chicken and pan-frying it is an optional step. Most days I skip, and add not-marinated, not-panfried, chicken after sauteing the base paste. Still yummy.

Ingredients:
- 500g Chicken, bone in and skin on
- Marinated with (optional step):
- 1 tsp Salt
- 1 tsp Turmeric Powder
- 2 Lemongrass Stalks
- 4-5 Kaffir Lime Leaves
- 1 Tomato
- 1 tbsp Palm Sugar or Brown Sugar
- 1 tsp Salt
- Juice from 1 Lime
Base Paste, to blend or grind:
- 8 stalks Red Chillies (alternatives: Fresno or Serrano chillies)
- 5 Thai Bird's Eye Chillies (SPICYYY! adjust according to spice tolerance)
- 2 medium-sized Onions or 8 Shallots
- 4 cloves of Garlic
- 1 inch Ginger
- 1/2 cup of Water

Am glad to see you here… here is our famous grilled chicken which perfect for lunch or dinner.. the sauce is rich, yet yummy for sure ????
GRILLED CHICKEN IN COCONUT MILK SAUCE
Ingredients:
1 whole roast chicken (weight: 700-800gr or around 1 kg - devided into 4 or 10 pcs)
3 pcs chilies (off the seeds)
5 pcs garlic
4 pcs candle nut
1/2 tsp shrimp paste
Bit of tamarind
1 pc fresh tomato
1 pc palm sugar
3 TBS sugar (if needed, depends on the sweetness of the palm sugar)
1 pack instant coconut milk
300-500 cc water
3 pcs bay leave (fresh if it is possible)
2 slices galangal
How to cook:
1. Grind the chilie, garlic, candle nut, shrimp paste, and tomato (grind without water)
2. Prepare a hot pan eith 5TBS oil, and put all the grinded ingredients… stir fried till smells good
3. Add the galangal, and bay leaves. Put the chicken, let it half cooked
4. Add the water and coconut milk. And then seasonings: salt, palm sugar, sugar, chicken powder and pepper powder
5. Let it cooked, the chicken will absorb half of the water.. then set aside the chicken.
6. Prepare another pan for grilling. Put the chicken in it… let it cooked and a bit burn…
7. It is done.. arrange the chicken on the plate, and pour the sauce on it, decorate with simple flower and leaves. Eat while warm with rice…
