How To make Barbecued Chicken Sandwich(Gr)
2 whole (3 1/2-pound) chickens
3 tablespoons dry rub #1
dry rub #1:
1 tablespoon paprika hungarian
1/2 teaspoon celery salt
1/2 teaspoon sugar
1/2 teaspoon sage
1/2 teaspoon mustard
1/2 teaspoon chipotle powder
:
barbecue sauce-- 1 tablespoon peanut oil
2 tablespoons minced onion
1 1/2 cups cider vinegar
1 cup ketchup
3 tablespoons dry rub #1
2 tablespoons brown sugar
1 cup coffee
1 tablespoon mustard
2 cloves minced garlic
Dry Rub: Mix all ingredients well and reserve in refrigerator, covered tightly. Will keep for up to 2 weeks.
Barbecue Sauce: In a saucepan, heat peanut oil. Add garlic and onion. Cook until soft. Add remaining ingredients and simmer until thickened.
Chicken: Rub the chicken inside and out, with dry rub #1, making sure to get under the skin as much as possible. Massage the bird well and refrigerate overnight.
Prepare the grill with soaked wood chips. Split the chicken in half and cook on the grill over slow heat for 45 minutes or until cooked.
Allow the chicken to cool slightly. Pick the meat off the bone, remove the skin. Chop the chicken lightly and mix with 1 cup of the barbecue sauce. Serve on white bun with cole slaw.

Grilled Chicken Panini
Serving: 1
INGREDIENTS
Oil - 1 teaspoon
Sourdough bread - 2 slices
Cheddar cheese - to taste
Sliced tomatoes - to taste
Sliced onions - to taste
Grilled chicken - to taste
Basil leaves - to taste
American cheese - to taste
Salt - to taste
Grounded black pepper - to taste
*All ingredients can be adjusted to taste.
PREPARATION
1. Preheat grill to medium-high heat and spray with cooking oil. Place a slice of bread on the grill.
2. Then add cheddar cheese, sliced tomatoes, sliced onions, grilled chicken (pre-cooked), basil leaves, salt, grounded black pepper, and american cheese. Place the second slice of bread on top. Then close the lid and grill until golden brown.
3. Serve hot with chips or fruits.
Enjoy.
Note: If you do not have a panini grill, you can certainly still make panini. Just grill the sandwich in a skillet (an iron skillet if you have one) and set a second heavy skillet on top of it, pressing to flatten slightly. You’ll need to turn the sandwich halfway through to cook both sides.

Brine: 10 cups water
1/2 cup white sugar
1/4 cup salt
2-3 tbsps chicken bouillon
red pepper flakes
2 tbsps all purpose seasoning
rosemary, thyme, fresh garlic
1 lemon
1/2 onion
Chicken:
4 Leg Quarters (you can use whatever cut of chicken you want)
2 cups BBQ Sauce
salt, pepper, garlic, onion powder
BBQ Seasoning (whatever your favorite brand is)
Directions:
Add all brine ingredients to a large pot and boil for 2-3 minutes and then cool to room temperature. (You can pour over ice to help speed it up) Brine chicken for 4-24 hours in the fridge. Next, Dry the chicken thoroughly and season to taste with all purpose seasoning and bbq seasoning.
Oven Method: Preheat oven to 400 degrees. Sear chicken, skin side down for 2-3 minutes or untile golden brown and then flip. Place on a wire rack and bake for 45 minutes or until chicken hits 175 degrees internal temp. Brush with warm BBQ sauce during the last 15 minutes.
Grill Method: Grill directly over fire, skin side down first for 2-3 minutes or until golden brown. Flip and cook the other side for a few minutes. Move to indirect side of the grill and cook for 30-45 minutes or until 175 degrees internal temp. Brush warm bbq sauce on for the last 15 minutes.

Here is episode 2 of my Game On series featuring a copycat version of the Quick & Carmichael that is sold at the home field for the Philadelphia Eagles at Lincoln Financial Field. The combination of pecan smoked pulled pork BBQ along with a maple sugar smoked BBQ chicken was a winner! Good stuff folks!
