How To make Acquasale (Sweet Pepper Sauce)
Ingredients

tablespoons
olive oil
1
medium
red onion, finely sliced
1/2
clove
garlic, finely minced
3
each
red bell peppers, roasted, ribs, membranes and seeds removed and cut into 1/2 inch slices
2
medium
tomatoes, seeded and cut into chunks
1/4
teaspoon
salt
1/4
cup
breadcrumbs, optional, fresh
Directions:
Warm the olive oil in a large heavy saute pot. Add the red onion and saute over a low heat until the onion becomes limp and translucent.
Add the garlic and saute briefly. Stir in the pepper strips and sweat them over low heat for 20 to 25 minutes. Add the tomatoes, salt and cook another 2 to 3 minutes. Cool to room temperature.
Put the mixture in a food processor and pulse about 30 times. DO NOT PUREE. If it seems too moist, add the breadcrumbs.
Serve either as an antipasto, or as a main dish with pasta or polenta.
Or, add stock & serve as a soup.

INGREDIENTS:
For the Egg:
Canola oil
1/2 cup chicken breast, strips
Salt
8 pieces shrimp, shelled and deveined
1 pieces white onion, julienned
1/2 cup red and green bell peppers, julienned
6 pieces eggs
Black pepper
For the Sauce:
1 cup chicken stock
4 tablespoons oyster Sauce
2 tablespoon sugar
Slurry (cornstarch and water)
Salt
Black pepper
1 tablespoon sesame oil
Garnish:
Onion leeks

MY GO-TO RED SAUCE RECIPE!
Red Sauce
Ingredients:
7 tomatoes
1 tbsp vegetable oil
5 cloves of garlic finely minced
1/2 cup water
Salt to taste
Black pepper to taste
1/2 tsp red chilli powder
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 dried basil
1 tbsp chilli garlic ketchup
1 tbsp ketchup
1/2 tsp vinegar
Instructions:
1. Roast tomatoes, peel them and roughly quarter them.
2. To a non- stick skillet, add oil.
3. Add in garlic and cook it for 30 seconds.
4. Add in tomatoes. Cover and cook for
5-10 min or until the tomatoes soften.
5. Once the tomatoes have softened, start breaking them with your spatula.
6. Add water. Cover and let the sauce reduce for around 5 mins.
7. Once the sauce has reduced, add in salt, black pepper, red chilli powder, oregano, thyme, basil,
chilli garlic ketchup, ketchup and vinegar.
8. Cover and let it cook for another 2-3 mins.
This recipe makes about one cup. It can be used as pizza sauce, pasta sauce, dipping sauce, etc.
