How To make Acquasale (Sweet Pepper Sauce)
Ingredients

tablespoons
olive oil
1
medium
red onion, finely sliced
1/2
clove
garlic, finely minced
3
each
red bell peppers, roasted, ribs, membranes and seeds removed and cut into 1/2 inch slices
2
medium
tomatoes, seeded and cut into chunks
1/4
teaspoon
salt
1/4
cup
breadcrumbs, optional, fresh
Directions:
Warm the olive oil in a large heavy saute pot. Add the red onion and saute over a low heat until the onion becomes limp and translucent.
Add the garlic and saute briefly. Stir in the pepper strips and sweat them over low heat for 20 to 25 minutes. Add the tomatoes, salt and cook another 2 to 3 minutes. Cool to room temperature.
Put the mixture in a food processor and pulse about 30 times. DO NOT PUREE. If it seems too moist, add the breadcrumbs.
Serve either as an antipasto, or as a main dish with pasta or polenta.
Or, add stock & serve as a soup.

INGREDIENTS
1 tablespoonful of Coconut oil
2 large sliced Onions
80g of chopped French Beans
40g of sliced Mushrooms
100g diced Prawns or Shrimps
25g of Cashew Nuts or Peanuts
1 tablespoonful of Buy Ndudu’s Bolu Seasoning (Smoked Shrimp blend)
Half a teaspoon of Chilli Flakes or a pinch of Buy Ndudu’s Scotch Bonnet powder
1 tablespoonful of Roast Pepper & Koobi sauce
20g of chopped Parsley
1 teaspoonful of Corn Starch
80ml of Water
Salt to taste

Ingredients:
- 1 cup chopped pineapple
- 3 cloves of garlic
- 5 small chilis
- 1.5 tablespoons of apple cider vinegar
- 1.5 cups sugar
- 3/4 cup water
- salt to taste
- 1.5 tablespoons of corn flour
- 2 tablespoons of water
Instructions
- chop pineapple and chilis and add to a blender with crushed garlic and water, blend for 10 - 15 seconds
- add the mixture to a saucepan, adding the apple cider, salt and sugar
on a medium high heat for 3 - 5 minutes, stirring occasionally
- in a separate bowl mix the water and corn flour, mix together and add to the pan and stir thoroughly
- after 1 minute (or when the sauce has thickened) remove from the pan and leave to cool
- once cooled add to jar/ container
