G. Granaroli XbrG76A Dry bread crumbs (seasoned or plain) 1 1/2 pound Cutlets sliced thin and
Olive oil for frying pounded (except for fish) Grated cheese and slices of 4 Beaten eggs -- lightly salted
mozzarella (1 per cutlet)
*(can be used for chicken, turkey, or fish fillets) Dip each cutlet into egg, breadcrumbs, and quickly into egg again. Put into hot, but not smoking olive oil. (If oil is too hot cutlets will burn before they cook; if oil is not hot enough, cutlets will soak up oil and breading will not stick.) Cook each one about 3-4 min. on each side until golden brown. Drain well on paper towels or brown bags. When all cutlets are done, arrange in a shallow baking dish. Ladle sauce on top of each one to mostly cover it, but don`t let it swim in sauce. Generously sprinkle with grated cheese. Top with mozzarella slices and bake in oven for about 20 min. until cheese melts. Serve hot with pasta on the side. Converted by MMCONV vers. 1.00

The Veal Chop Parmigiana by the Brooklyn Brothers | Monster Veal Parmigiana
This dish is a true Italian classic, and for good reason. The combination of tender veal chops, rich alfredo sauce, and homemade tomato sauce is simply irresistible. The crispy breading on the veal adds a perfect texture contrast, and the whole thing whereas the other is topped with tomato sauce and a generous amount of melted Provolone & Fontina cheese, and the other with an Alfredo Mushroom Sauce smothered in cheese.
Here's what you'll need:
• 4 bone-in veal chops
• Salt and pepper to taste
• 1 cup all-purpose flour
• 5 eggs
• 2 cups of Italian style breadcrumbs
• 1/4 cup grated Parmesan cheese
• 4 cups of olive oil
• 1 Cup of Romano cheese
• 8 oz. of shredded Fontina cheese
• 8 oz. of shredded Provolone cheese
Instructions:
1. Season the veal chops with salt and pepper. Dredge the chops in flour, then dip them in the beaten eggs. Finally, coat the chops in the breadcrumbs.
2. Heat the olive oil in a large skillet over medium-high heat. Add the breaded veal chops and cook for 2-3 minutes per side, or until golden brown and then place in a 400 degree oven for 10 minutes.
3. While the veal chops are cooking, begin preparing the alfredo sauce.
4. Once the veal chops are cooked, transfer them to a baking dish. Pour the Alfredo sauce over the veal chops, then top with the pesto sauce. Sprinkle the mozzarella cheese over the top.
5. Bake in a preheated 400 degree F oven for 10 minutes, or until the cheese is melted and bubbly.
6. Serve immediately and enjoy!
Alfredo Mushroom Sauce Ingredients:
• Pint of Heavy cream
• ½ stick of butter
• 8 ounces of sliced mushrooms
• 3 cloves of garlic (chopped)
• ¼ cup of white wine
• 3-4 TBSP of Romano cheese
• Salt & Pepper to taste
Instructions:
1. In a large pan add butter and garlic – fry garlic until translucent.
2. Add mushrooms and wine – sauté for about 5 minutes.
3. Add the heavy cream, salt and black pepper
4. Let boil (frequently stirring) for about 5 minutes.
5. Add Romano cheese and turn off heat.

Chicken parmigiana can be likened to Italian crumbed chicken with toppings, typically including cheese and tomato sauce, but is it Italian? NO! This is a dish which has become famous over the world and many mistaken it for being authentic but most variations are pretty un-Italian! Except, maybe, my one. As an Italian I have recreated this pub-classic with delicious authentic ingredients and believe me there is no going past this recipe for a cheesy chicken stack that is smothered in rich tomato and basil sauce. I even have two options for cheese on top, would you prefer buffalo mozzarella or burrata? Either way you will never order this out again. It might not be authentic, but I’ve created a Chicken Parmigiana that even my family would enjoy.
