Sauce
15 oz can diced tomatoes
1/2 onion
4 cloves garlic
2 tbsp tomato paste
1tsp oregano
1/4 tsp red pepper flakes
Salt and pepper to taste
Other ingredients
1-2 chicken breasts
1 cup panko breadcrumbs
1/2 cup grated parm
oregano to taste
1-2 eggs
2 tbsp water
2/3 cup AP flour
1/3 cup Olive oil
Salt and pepper to taste
Mozzarella cheese
Basil
1) in a pot over medium heat add olive oil and sauté onions and garlic for 4-5 minutes. Then add tomato paste and cook for 1 minutes next add diced tomatoes,oregano, pepper flakes
And salt & pepper to taste simmer stir if occasionally for 15-20 minutes.
2) Butterfly your chicken breast and season with salt and pepper
3) in 3 different bowls add 1 breadcrumbs, parm, oregano, and pepper
2 eggs and water
3 AP flour salt & pepper
4) dredge your chicken in flour then egg, then breadcrumbs.
5) in a large skillet heat olive oil over medium heat and fry your chicken 2-3 minutes on each side or until 165f
6)then remove and top your chicken with sauce and cheese then torch or broil until cheese is melted, then serve with basil and enjoy!!!
How to Make CHICKEN PARMIGIANA Like an Italian
Chicken parmigiana can be likened to Italian crumbed chicken with toppings, typically including cheese and tomato sauce, but is it Italian? NO! This is a dish which has become famous over the world and many mistaken it for being authentic but most variations are pretty un-Italian! Except, maybe, my one. As an Italian I have recreated this pub-classic with delicious authentic ingredients and believe me there is no going past this recipe for a cheesy chicken stack that is smothered in rich tomato and basil sauce. I even have two options for cheese on top, would you prefer buffalo mozzarella or burrata? Either way you will never order this out again. It might not be authentic, but I’ve created a Chicken Parmigiana that even my family would enjoy.

Chicken Parmesan for Two! A date night dinner | The Recipe Rebel
This Chicken Parmesan is crispy on the outside, juicy on the inside and topped with marinara sauce and melted cheese! It’s easier than you think!

INGREDIENTS:
2 boneless skinless chicken breasts (150-200 grams each)
½ cup buttermilk
½ cup all purpose flour (65 grams)
½ teaspoon Italian seasoning
¼ teaspoon salt
¼ teaspoon paprika
⅛ teaspoon black pepper
2 large eggs
½ cup seasoned dry bread crumbs (60 grams)
¼ cup + 2 tablespoons finely shredded Parmesan cheese (20 grams + 10 grams)
2 tablespoons canola oil
½ cup tomato sauce
⅔ cup shredded mozzarella cheese (50 grams)
INSTRUCTIONS:
Preheat the oven to 425 degrees F.
Place chicken breasts on a large cutting board and cover with plastic wrap. Use a rolling pin or heavy pan to pound the thicker end of the chicken breasts until they are an even size from one end to the other.
Gather 4 shallow dishes to bread your chicken.
In one dish, put your buttermilk.
In another dish, stir together your flour, Italian seasoning, salt, paprika, and black pepper.
In the third dish, whisk your eggs.
In the fourth dish, combine your bread crumbs and 1/4 cup Parmesan cheese.
Dip your chicken in the buttermilk, then the flour to coat. Move the chicken to the egg, and then coat well in the bread crumb mixture, pressing so that it adheres well. Repeat with the second chicken breast.
Heat a large pan over medium heat and add the oil.
When the oil is hot, add the chicken breasts and brown for about 2 minutes per side, just until golden (this can happen quickly, so don't run away!).
Top each chicken breast with half of the tomato sauce, mozzarella cheese, and the 2 tablespoons Parmesan cheese.
Bake at 425 degrees F until cooked through — the chicken needs to reach an internal temperature of at least 165 degrees F. Serve as desired over pasta or otherwise.
