1 lb Ground Beef 2 tb Chili Powder 1 Clove Garlic; minced 1 Pouch Soup Mix * 3/4 c Beer or Water 1 cn Tomatoes ** 1 cn Kidney Beans; drained *** 1 Cheddar Cheese; shredded 1 Sour Cream * Use Campbell's Onion Mushroom Soup and Recipe Mix ** 14 1/2 oz can, undrained and cutup *** 15 oz can Crumble beef into 2 qt microwave-safe casserole; stir in chili powder and garlic. Cover with lid; microwave on HIGH 5 mins or until beef is no longer pink, stirring once during cooking to break up meat. Spoon off fat. Stir in soup mix beer or water, tomatoes with their liquid and beans. Cover; microwave on HIGH 3 mins or until hot and bubbling. Stir again. Reduce power to 50%. Cover; microwave 10 mins or until flavors ar well blended, stirring once during cooking. Let stand, covered, 5 mins. Garnish with cheese and sour cream.

My take on Mildred’s Hot Dog Chili from Buck’s Drive-in , Saltville, VA
Buck’s Drive-In, located in Saltville, VA, has been owned for years by the Maiden family. One of my very best friends is the original owners granddaughters. Unfortunately, I never got to meet Buck before he passed away. However, I did get to meet Mildred (MawMaw) serveral times. She was a total trip. A sassy southern woman with a heart of gold and a very sharp tongue. She passed away several years ago.
Her hot dog chili was known throughout the region. The recipe was a secret and I never asked for it. So i searched for something similar. As well as I can remember, this is pretty close. Keep in mind, I have not had her amazing chili in over 15 years. This is how I remember it.

My take on... Mildred’s Hot Dog Chili
1 lb lean ground beef 1/3 cup water 15 oz tomato sauce 1/2 cup ketchup 2 Tablespoon chili powder 1 teaspoon seasoning salt 1 teaspoon pepper 1-2 teaspoon sugar 1/2 teaspoon onion powder 1/2 teaspoon garlic powder
With a mixer, mix together beef and water until all the chunks are broken up.
Add remaining ingredients and mix until smooth.
Cook on simmer for 20 minutes, season to taste.

Ingredients: 1 lb of beef 1/2 medium onion, chopped 3 cloves of garlic 1 can 28oz diced tomatoes 1 can 15oz kidney beans 2 Tbsp chili powder 1 1/2 Tbsp of cocoa powder 1/2 tsp hot pepper sauce 1 1/2 tsp of ground cumin 1/2 tsp of ground pepper 1/2 tsp of salt
Instructions: - Brown meat with 1 clove of garlic minced, and onion - add to slow cooker other ingredients except salt, pepper, cumin, and hot pepper sauce - slow cook 4.5 hours add salt, pepper, cumin, and pepper sauce -slow cook 20-30 minutes - serve
