How To make Spicy Tomato Sauce
1/2 c Olive oil, best quality
2 c Onions, yellow
4 lb Tomatoes, plum
6 oz Tomato paste
2 tb Basil, fresh, minced
1/2 ts Oregano, dried
1 ts Salt
1 tb Pepper
4 c -water
5 Garlic cloves, minced
1/2 c Italian parsley, chopped
1. Heat olive oil in a large deep pot. Add finely chopped onions and
cook, covered, over low heat until tender and lightly colored, about 25 minutes. 2. Add skinned and seeded plum tomatoes, tomato paste, basil, oregano,
salt and freshly ground black pepper. Simmer for 10 minutes, stirring occasionally. 3. Add the water and cook very slowly, uncovered, for 3 hours.
4. Stir in the minced garlic and finely chopped parsley and simmer for
another 5 minutes. 5. Taste and correct seasoning if necessary. Use immediately or cool to
room temperature before covering. Refrigerate or freeze. About 3 quarts.

Ingredients
2 Tbsp butter
3 cloves garlic
1/2 onion
3 Tbsp tomato paste
1 cup heavy cream
1/2 cup Parmesan cheese
Salt & pepper
12 oz pasta (I used rigatoni)
1/3 cup pasta water
Basil & parm for garnish
Cook your pasta in salt in water to package directions (save some pasta water). In a pan over medium heat, add butter, onion and garlic. Cook until softened around 2 minutes. Add tomato paste and cook until lightly caramelized. Add your cream, then season with salt and pepper. Add Parmesan cheese, pasta water and your cooked pasta. Mix well. Serve with basil or fresh Parm.

Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

Ingredients:
3kg (6.5lb) Plum/Roma tomatoes
2-3 tablespoons Olive oil
1 large onion
3 garlic loves
Salt to taste
1-2 teaspoons Oregano (optional)
7-8 Basil leaves
2 tablespoons Lemon juice/vinegar (if canning use ¼ cup)
Directions:
1. Fill a large pot with water and bring to a boil. Meanwhile prepare an ice bath. Core out the stems from the tomatoes and slice a shallow X in the bottom of each tomato.
2. Blanch the tomatoes in boiling water for 30-60 seconds, then transfer to ice bath. Remove the skin from the tomatoes.
3. Chop the tomatoes into small chunks and set aside.
4. In a large pot heat olive oil. Add chopped onion and sauté over low heat until golden, about 7-8 minutes. Add crushed garlic and sauté for 2 minutes more.
5. Add chopped tomatoes to the pot, season with salt, oregano and basil. Bring the mixture to a boil, reduce the heat and simmer for 60-90 minutes, until reaches desired consistency (until almost all the liquid has evaporated and the tomatoes are reduced to a thick, jam-like consistency). Stir frequently. At the end add the vinegar, stir and turn the heat off.
6. If you prefer smooth tomato sauce, puree the sauce using a hand blender. Transfer to a jar.
Notes:
• The best tomatoes for making homemade sauce: there are many types of tomatoes, I would recommend making homemade tomato sauce with Roma tomatoes, Plum tomatoes, San Marzano or a combination of serval kinds. It is important to use ripe tomatoes.
• Onion, garlic, basil and oregano are just optional additions. You can omit them all or use some of them.
• Canning: Pour into sterilized canning jars and twist on sterilized lids until very secure. Place jars in a pot of boiling water for 30 minutes. Let cool completely on the counter. Make sure that the lids have sealed completely. If the lid pops up when pressed, the canning process did not work properly. Store in your pantry for up to one year!
• How to store tomato sauce in the fridge: transfer the sauce to a sterilized jar and keep in the fridge up to 2 weeks
• How to store tomato sauce in the freezer: let the sauce cool completely, transfer to a jar/can or container and freeze up to 2-3 months.
