Szechuan Spicy Chicken
Szechuan Spicy Chicken (La Zi Ji Ding)
A popular spicy dried chilli pepper chicken dish. There is a lovely description of the dish saying that you need to find the chicken among the chilli peppers!
Instructions
1.Marinate chicken
In a bowl, marinate chicken with lemon juice, ginger, light soy sauce and salt.
Set aside for about 15mins.

2. Fry chicken
In a pan, heat oil and deep fry chicken over medium high heat for 6-7 minutes until golden brown and crispy.
Drain and set aside

Heat pan with 50ml of the deep frying oil on medium heat and add in the garlic, ginger, white part of spring onion and stir fry till fragrant.
Add in Szechuan peppercorn and dried chilli to stir-fry over medium low heat until fragrant.
Add in the chicken, water, sugar and stir fry till water evaporates.
Add the green part spring onions, and sesame seeds and toss over high heat for a minute.
Fry spices and chicken
Plate and Serve!
Chef tips:
You can replace chicken with pork cubes, chicken skin, pig skin etc.
Try it with oyster mushroom cubes for a vegetarian version

Ingredients:
Serves 4
Marinade for the chicken
---
Marinate for at least 30 minutes but the longer the better

2 pieces of chicken thigh - cut into cubes
1 teaspoon of salt
1 tablespoon of Chinese white rice wine
3 teaspoons of cornflour
A few dashes of white pepper
Other ingredients
---
1/2 thumb size of ginger - sliced thinly
15 pieces of dried chilli - soaked and roughly chopped
4 cloves of garlic - sliced
1.5 tablespoons of Sichuan peppercorn - smashed lightly
1 stalk of spring onion
2 tablespoons of light soya sauce
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao Wine)

This recipe will show you how to make Sichuan Chicken from your own home kitchen! Everything is very simple and straightforward and it would be a super fun dish to make for your family and friends!

Ingredients:
Chicken legs or thighs 3
Dry Chili 1.5 oz
Sichuan Peppercorn 1 tbsp
Green onion 3-4
Garlic 5-6
Ginger 1 piece
To marinate chicken legs:
White pepper 1/2 tsp
Cooking wine 1 tbsp
Salt 1/2 tsp
Soy sauce 1 tsp
Corn starch 1 tbsp
Marinate for 15-20 minutes
Deep fry chicken with:
Oil 1-2 cups
Fry chicken twice to create a crispy on the outside and tender on the inside texture!
Stir-fry seasoning:
cooking wine:1/2 tbsp
soy sauce:1 tsp
sugar: 1/4 tsp
sesame oil: 1/4 tsp

The recipe I have shared here explains how to make the Szechuan Chicken with easy step-by-step instructions. This Szechuan Chicken is a perfect stir fry that pairs well with fried rice, noodles and tastes similar to your favorite Chinese take-out.
Ingredients:
To Marinate:
500 gm Chicken, boneless
1 tbsp Dark Soy Sauce
1 tsp Garlic Powder
1 tsp Pepper Powder
1 tsp Brown Sugar
1½ tsp Chinese Five Spice Powder
¼ tsp Baking Soda
½ tsp Salt
2 tbsp Corn Starch
To Stir-Fry:
2 tsp Sesame Oil
2 tsp Garlic, chopped
1 tsp Ginger, sliced
12 Dry Red Chili, soaked in hot water
3 tbsp Green Onions
1 tsp Sichuan Pepper, crushed
Recipe Notes:
1. For Authentic Flavor - Sichuan Pepper is the main ingredient that gives authentic taste and flavor to this dish but you could also use pepper powder if Sichuan peepers are not handy for you
2. Frying Options - Usually the marinated chicken is deep-fried in oil but you can also pan-fry them for less oil usage
3. Stir-Frying - Stir-Frying the chicken with other seasoning ingredients on high medium heat delivers the similar taste and flavor of restaurant Schezwan Chicken
4. Veggie options - You can also add bell peppers, mushrooms, broccoli, and carrots for veggie options
5. Serving - This Szechuan Chicken tastes delicious on its own as a starter and you can also serve it as a side dish with fried rice and noodles
