Easy Walnut Rugelach Filled Pastry Recipe | Filled Cookies
This walnut rugelach are soft, crumbly and flaky. Rugelach (a.k.a. ‘rogaliki’) are the perfect cookies and are surprisingly easy to make (the cookie dough will surprise you)!

Ingredients for Walnut Rugelach Recipe:
►1 cup (16 Tbsp) unsalted butter, melted (not hot)
►1 cup (8oz) warm milk (2% or whole milk)
►4 cups (500 grams) all-purpose flour, measured correctly*
►3/4 Tbsp active dry yeast
Ingredients for Rugelach Filling/ Topping:
►10 oz apricot preserves
►1 cup Fisher walnuts**
►3/4 cup dried cranberries/ craisins, dried cherries, currants, or golden raisins
►2 Tbsp granulated sugar
►1 tsp ground cinnamon
►Powdered sugar to generously dust cookies

A few months back, I received a copy of DON’T WORRY, JUST COOK, a fab cookbook authored by my friends Bonnie Stern and Anna Rupert. Flipping through, I realized it was loaded with recipes I just had to try. One in particular caught my eye: BONNIE’S RUGELACH RECIPE. Here are some of the highlights:
- Rugelach are dainty, crescent-shaped cookies filled with jam, brown sugar and spiced nuts.
- These cookies are a filled baked confection originating in the Jewish communities of Poland, where they were often exchanged during Jewish holidays.
- The dough used to craft them is wonderfully flaky and made with both butter and cream cheese.
- The cookies are filled with jam, cinnamon, brown sugar and chopped nuts.
- The yield on this recipe is 48 cookies, so there’s some serious scrumptiousness on the way.

Rugelach | How to Make Rugelach
Rugelach originates from the Jewish communities of Poland. And they are delicious!
But what is a rugelach?
My understanding is a dough (cream cheese included!) rolled around a filling (nuts/jam/spiced sugar) that is then rolled up in a crescent (think croissants).
This recipe makes a grand total of 12 rugelach...so not an underwhelming or overwhelming amount of cookies...just the right amount. Plus I can attest that these are delicious right out of the freezer ????

60g Butter, salted (0.25c)
84g Cream Cheese (0.33c plus 2t)
1t Sugar, white
105g Flour, All Purpose (generous 0.66c)
1 Egg, yolk only
0.25t Salt, Kosher
2-3T Jam of your choice - raspberry is great. i used spicy sour cherry. but go nuts!
2-3T Nuts, chopped - i used pecans but any nut would be great
0.25c Spiced Sugar - white sugar with a teaspoon or two of cinnamon or cardamom mixed in. you’ll have leftovers most likely.
