For years now, the Mediterranean way of life has been looked to for health inspiration, and it’s easy to see why. Diets rich in fruits, vegetables, fish, and healthy fats are good for us, particularly our hearts.
Eating like they do in countries such as Greece, Italy, and Turkey has been shown to reduce the risk of heart disease.
What the Mediterranean Diet Is All About?
The Mediterranean diet draws upon the culinary practices of southern Europe, North Africa, and the Mediterranean Middle East, all areas where food is prepared to be savored and enjoyed, not rushed.
Fruits, vegetables, whole grains, legumes, nuts, and herbs make up the foundation of this diet’s “pyramid,” and every meal is centered around them. Fish is eaten at least twice a week, while poultry, eggs, and dairy are eaten less often, perhaps just a few days a week. Meats and sweets, meanwhile, are served in moderation.
Healthy fats, like olive oil, should be used in place of others, like butter and vegetable oil. And red wine can even be enjoyed in moderate amounts.

2 medium Heirloom Tomatoes
2 Tablespoons (30ml) Olive Oil or Grape Seed Oil
2 Tablespoons (30ml) fresh Lemon Juice , or to taste

1/2 teaspoon fresh or dried Thyme , chopped

Fennel ,Endive and Apple Salad
This salad it truly unique for its taste and a flavor.
YOU WILL NEED:
1 Fennel root
3 small Endives
½ Granny Smith Apple
½ Honey Crisp Apple
2 cups baby Arugula
DRESSING:
Juice from 1 lemon
1/3 cup Virgin Olive Oil
salt and pepper to taste

Fresh Peach & Prosciutto Salad Recipe - Woolworths
Salty prosciutto & sweet, fresh peach. This video recipe with celebrity chef Tobie Puttock walks through the process with helpful tips.
FRESH PEACH AND PROSCIUTTO SALAD
Preparation Time: 15 mins
Serves: 8
Ingredients:
2 tablespoons Woolworths Select pinenuts
4 fresh peaches, halved, stone removed
120g bag fresh baby rocket leaves
1 cup fresh continental parsley leaves
1 cup fresh basil leaves
2-3 tablespoons Woolworths Select Australian extra virgin olive oil, plus extra to serve
1 tablespoon Woolworths Select balsamic vinegar
16 thin slices prosciutto
Method:
1. Put pinenuts into frying pan, cook, tossing until toasted. Cool. Slice the peaches into wedges.
2. In a large mixing bowl bring together the rocket, parsley, basil, peach and pinenuts. Season. Dress with the extra virgin olive oil and the balsamic and very carefully toss the ingredients in the bowl.
3. Arrange the ingredients on a large serving platter and prosciutto snuggled into the leaves.
4. Drizzle with extra oil. Serve
