How To make Shaker Lemon Pie
2 Lemons
1 2/3 Cups sugar
Pastry for double crust pie -- 8 inch 4 eggs
1. Slice lemons paper-thin, rind and all. Remove any seeds. place in bowl and add sugar. Mix until slices are well coated. Let stand overnight.
2. Next day, line 8-inch pie plate with half the pastry. Beat eggs well and fold into lemon-sugar mixtures.
3. Pour into curst. Seal with top crust. Cut vents to allow steam to escape.
4. Bake at 450 degrees for 15 minutes, then reduce heat to 375 and continue baking for 25-30 minutes, until knife inserted in center comes out clean.
5. Cool before cutting. Serve with whipped cream if desired.

For pastry;
380 g all-purpose flour
200 g unsalted butter
2 eggs
50 g granulated sugar
1 pinch of salt
10 g of baking powder
For lemon filling;
2 lemons ( soak 10 minutes in hot water)
180 g of granulated sugar
1 pinch of cardamom powder
30 g of corn starch
Bake in preheated oven at 175 C degree for about 30-40 minutes

LEMON CREAM PIE:
• 1 prepared pie crust
• 3/4 cup sugar
• 1/3 cup cornstarch
• 1 cup heavy cream
• 1 cup milk
• 1 tablespoon lemon zest
• 1/2 cup lemon juice
• 3 large egg yolks
• 2 tablespoons salted butter
• 1 teaspoon vanilla extract
STABILIZED WHIPPED CREAM:
• 3 tablespoons cold water
• 1 teaspoon unflavored gelatin
• 1 cup heavy cream
• 2 tablespoon powdered sugar
• 1 teaspoon vanilla extract

1️⃣ 00:01:03 - Combine the sugar, cornstarch, milk, cream, lemon zest, and lemon juice in a medium saucepan. Cook over medium heat, stirring constantly until it begins to bubble. Continue stirring for about 2 minutes until it starts to thicken.
2️⃣ 00:01:40 - Remove from heat and quickly mix a little of the mixture into the egg yolks. Whisk it rapidly and return it to the pan. Cook for an additional 90 seconds over medium heat.
3️⃣ 00:02:01 - Remove from heat again and stir in butter and vanilla. Pour into prepared pie shell. Let cool for about 15 minutes and then refrigerate until completely cooled and set.
4️⃣ 00:02:28 - Make the whipped cream topping by sprinkling gelatin over cold water in a small bowl. Let stand 5 minutes. Then, microwave on high for 5-10 seconds, until gelatin melts and liquid is clear.

6️⃣ 00:04:03 - Pipe whipped cream onto the top of the completely cooled pie for a decorated effect or simply spread it over the top of the pie in an even layer. Refrigerate until ready to serve.
