How To make Rotel Potatoes
1 cn (10 oz) diced Rotel
-tomatoes, with liquid 2 3 large potatoes
OPTIONAL:
Eggbeaters equivalent of 4 eggs 2-3 oz. lowfat or nonfat cheese
4-6 tortillas
Microwave or boil the potatoes until they are half-cooked; the flesh should still be firm, and not crumbly. Let them cool until you can comfortable handle them, and cut into bite-sized pieces. In a large skillet, dump the can of Rotel tomatoes and most of the juice, then add potatoes. Cook over medium heat, stirring occasionally, until most of the tomato liquid has been absorbed by the potatoes (this takes anywhere from 10 to 30 minutes, and is usually dependant on how hungry you are). Optional: If you want to add eggs at this point, make a crater in the center of the pan and add eggs. Stir the eggs over medium heat until eggs are scrambled. When they are just about done, mix thoroughly with the potato mixture. Serve with cheese (optional), either alone, or wrapped in steamed tortillas. With the eggs and cheese, this make a simple, spicy, and very filling breakfast. Other ideas I have yet to try: Stir in spinach, zucchini, mushrooms, and or onions with the potatoes. 230g ground beef
1 egg
salt to taste
black pepper to taste
paprika
mix well
50g chopped onion
15g green onion
15ml olive oil
Mix well
Tortilla(23cm)
Fold and unfold the tortilla in half
Take some of the meat fillings
Put the filling on the tortilla
Spread the beef on half of the tortilla evenly
Sprinkle some mozzarella cheese
Fold the tortilla in half
Tortilla(17cm)
You can also make it with smaller tortillas
Fold than unfold in quarters
Cut the tortilla like this
Spread the beef filling on 3/4 of the tortilla like this
Fold the tortilla like this
Repeat

Medium-low heat
Olive oil
Spread the oil every in the pan
Fry the tortilla for 5 minutes
Flip and fry for another 5 minutes
The color should be golden brown
Done!
Medium-low heat
Add some olive oil to the pan
Place the small tortillas in the pan
Fry for 5 minutes
Brush oil on top
Flip then fry for 8 minutes
Add 1tbsp water in the pan
Done!

Rotel Dip is an easy cheesy versatile dip that needs just minutes to prepare! With only few ingredients, this quick dip recipe has been a crowd pleaser for years!
Ingredients!
1.64 lb.
8 oz. Velveeta cheese
8 oz. Monterey jack cheese
8 oz. cream cheese
8 oz. can Diced Tomatoes and Green Chilies
1 can cream of mushroom
3 tbsps. fresh parsley
1/2 tbsp. onion powder
1/2 tbsp. garlic powder
1/24 crushed pepper
1/4 tsp oregano
1 tsp cumin
1 tbsp. creole seasoning
1/2 tsp black pepper
bake on 375 for 20 minutes

This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste
