How To make Rice and Broccoli Casserole
1/2 c Onion; chopped 1 pk Broccoli; frozen
1/2 c Celery; chopped 1 cn Soup, cream of mushroom
2 tb Oleo 1 cn Soup, cream of chicken
1 c Rice 1/2 lb Pasteurized process cheese
Servings: 6 Saute onion and celery in oleo until soft. Cook rice and broccoli sepa- rately according to package directions. Mix all ingredients together in a two-quart baking dish. Crush up 1 cup of Ritz crackers (You can also use buttered panko, breadcrumbs, or even cornflakes). Mix it with two tablespoons of Parmesan cheese and two teaspoons of parsley. Stir in 4 tablespoons of melted butter. Spread crumb topping over the cheese topping and bake for another 10 minutes.

3 CUPS FRESH STEAMED BROCCOLI FLORETS
3 CUPS CHICKEN BROTH
1/2 CUP LARGE ONION CHOPPED
3 TBSP. BELL PEPPER CHOPPED
1 CUP PEPPERIDGE FARM HERB STUFFING (TRADITIONAL)
8 TBSP. BUTTER
1 CUP MILK
1 CUP RICE
1/2 TSP. SALT
1/2 CUP SOUR CREAM
1/2 CUP MAYO
1/2 TSP. BLACK PEPPER
1/2 TSP. SALT
PINCH CAYENNE PEPPER
1/4 CUP FLOUR
2 CUPS SHREDDED MILD CHEDDAR CHEESE
Steam broccoli for 8 minutes. Combine broth and
milk. Sauté onion and pepper in a saucepan with 4
tbsp. butter until tender (medium heat). In a large
bowl combine rice, herb stuffing, mayo, sour cream,
black pepper, 1 cup cheese and mix well. Put onion
and pepper in a bowl with rice and other ingredients.
Melt 4 tbsp. butter in a saucepan. Add flour, salt,
cayenne, and blend with whisk. Continue cooking
until flour begins to brown. Add broth and milk and
bring to boil. Pour over rice. Mix well, then place in a
13x9 baking dish. Top with 1 cup shredded
cheese. Bake at 325 degrees F for 1 hour.

INGREDIENTS
2 Tbsp (30 ml) cooking oil
1 cup long-grain rice (rinsed)
1/2 small onion (diced)
1 celery stick (diced)
1 to 2 cloves fresh garlic (minced)
2 cups (473 ml) water
1 Tbsp (10 to 14 g) chicken bouillon powder
10 oz (283 g ) frozen chopped broccoli (thawed)
4 oz (113.5 g) American processed cheese
4 to 6 oz (113 to 170 g) sharp cheddar cheese
1/4 to 1/2 tsp black pepper
* buttered 2.7 Quart baking dish or 8 x 12
**CREAM SAUCE**
2 Tbsp (30 ml) cooking oil
8 oz mushrooms (diced)
2 Tbsp (28 g) unsalted butter
3 Tbsp ( 27 to 30 g) all-purpose flour
1 Tbsp (10 to 14 g) chicken bouillon powder
1 1/2 cups (375 ml) water
1 cup (236.5 ml) heavy cream
