Bolivia: Anticuchos & Arroz con Queso | Cultural Cooking
Join us as we begin cooking the primary dish from every country in the world but only using common grocery store ingredients on an average budget.
Recipes:
Anticuchos (Beef Heart Skewers)
- 1-1.5 lbs of beef chunks
- 1/2 cup of aji panca paste (gochujang as substitute)
- 3 cloves of chopped garlic
- 1/4 cup of red wine vinegar
- 1 tablespoon of dried oregano
- 1 teaspoon of dried cumin
- 1/2 cup of vegetable oil
1. We start by preparing the marinade using the aji panca paste, chopped garlic, red wine vinegar, dried oregano, dried cumin, and vegetable oil and mix them together in a bowl.
2. Mix in beef chunks while ensuring to stab with a fork to tenderize as well as allow an entrance for the marinade.
3. (Optional) transfer beef & marinade to a ziplock or vacuum seal bag to massage the marinade into beef further. I totally forgot to mention this in the video.
4. Let marinate for a minimum of 24 hours.
5. Grill to personal preference.
Arroz con Queso (Cheese Rice)
- 2 cups of rice
- 1 cup of milk
- 1/2 of a medium red onion
- 2 garlic cloves
- olive oil
- 10 oz of queso fresco
1. Saute red onion in an oiled pan over medium-high heat, halfway through adding garlic.
2. When cooked to personal preference, add rice and 5 cups of water. Reduce heat to a simmer.
3. Cut or shred queso fresco to desired size, the smaller the better for melting.
4. When the water level begins to appear low, add milk and chopped queso fresco.
5. Cook on low heat until cheese is melted and milk is gone.
Yungueno
- Singani (Grape brandy)
- Simple syrup
- Orange juice
1. I honestly eyeballed the measurements about about 1 shot of brandy, 1 shot of syrup, rest of the glass with orange juice.
2. Shake in metal shaker along with ice.
3. Pour and enjoy.

HOW I MAKE CHEESY AREPAS | Arepas Con Queso
Hello my beautiful fam!! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! ❤️
Today I’m going to share with you how I make a delicious cheesy arepa, now let me tell you I’m Mexican but I loooooove learning different foods from different regions! After watching Encanto, I got inspired to recreate this delicious recipe and let me tell you this will be a recipe to keep in our family! (Thanks to my friend for the little help) Like we have gorditas, Salvadorans have pupusas, Colombia, Venezuela, and Panama have arepas. Which in case you don’t know what an arepa is, an Arepas is a cornmeal cake that originated hundreds of years ago Traditionally, they were cooked on a pan called a budare, they can also be grilled, baked, or fried and can be stuffed with any shredded meat!

Tip!!!! If your dough feels a little dry just add more water!
You can use your favorite meal ring cheese, I personally don’t like mozzarella on this, I tried it and personally not my favorite so I used a mix of queso Oaxaca and Monterey Jack ????
You can use unsalted or salted butter that will just depend on how much additional salt you will add I used salted and added 1 tsp of salt
Ingredients: I got 8 arepas
4 cups precooked white corn meal
1 cup queso cotija
2 cups Monterey Jack, queso Oaxaca or mozzarella
3 1/2 - 3 3/4 cups warm water
2 tbsp salted butter
1 tsp salt
