How To make Red Beans and Rice Pink Adobe
4 c Dry red beans
1 ea Onion,chopped
1 ts Salt
1 tb Vinegar
1 ts Crushed red pepper flakes
1 1/2 lb Meaty ham hock
1/4 c Chopped onion
2 tb Bacon fat
2 c Canned tomato sauce
1/2 ts Ground black pepper
1 ts Tabasco sauce
1/4 ts Dried thyme
3 c Cooked white rice
1/2 lb Sausage,cooked and sliced
Clean and wash beans. Soak in a large pot overnight. When ready to cook, drain off water. In a heavy 4-quart pot or dutch oven, heat the bacon fat. Saute onions until wilted. Add the beans, tomato sauce, salt, pepper, vinegar, Tabasco, red pepper, and thyme. Add enough water to cover the beans. Simmer until beans are semi-cooked, about 30 minutes. Remove 1 cup of beans and drain. Mash in processor or blender. Return mashed beans to pot along with ham hock and cook over low heat for 2 hours, until the mixture is creamy, stirring occasionally. (The beans should be creamy and juicy. Toward the end of cooking time, if the beans seem to dry, add a little broth or tomato juice.) When done, remove ham hock. Remove meat from hock and return meat to the pot. Stir to mix. Evenly divide the rice into 6 individual serving bowls. Spoon the beans over the rice. A THANKTHECHEF original recipe. This is my take on Puerto Rican Beans.
The ingredients used are:
- Black Pepper
- Pink Beans (Habichuelas Rosadas)
- Ragu
- Sazon Goya
- Sofrito (the red colored)
- Knorr (Chicken Flavored Bouillon)
- Adobo (red cap or Orange cap)
- Granulated Garlic
- Cilantro
- (OPTIONAL) Cayenne Pepper

For the beans
1 cup of green pepper
1 tablespoon of cumin
4 oz of tomato sauce
a handful of cilantro
1/2 packet of chicken bouillon
1 teaspoon of oregano
adobo for taste
1 tsp of garlic
15oz of pink beans drained and rinsed (canned)
1 sazon packet
1/2 cup of sofrito
1/4 of a cup of olives (optional)
1/2 cup of onion
For the rice:
4 cups of rice extra long grain serves 5
1 tablespoon of salt
2 1/2 tablespoons of oil

Baked Chicken Marinade:
2 packets of sazon
Cayenne pepper
S & P
Smoked paprika
Lemon pepper
Dried oregano
Adobo Powder
1/2 lime
Avocado oil
1. Wash chicken with vinegar and lemon. Season chicken with 2 packets of sazon, cayenne pepper, lemon pepper, paprika, salt, pepper, dried oregano, adobo powder, 1/2 a lime and avocado oil.
2. Marinate chicken over night.
3. When ready to cook, let chicken sit out at room temp for 1/2 hour before placing in oven.
4. Cook at 350 degrees for about 2 hours uncovered or until skin is golden brown
Puerto Rican Rice:
2 cups parboiled rice
1 tablespoon olive oil
2-3 spoons sofrito
1 can green pigeon peas
1 can Goya tomato sauce
2-3 packets of sazon seasoning (depending on how you want the color of your rice to be)
1 tablespoon adobo powder
S & P to taste
1. Sauté sofrito, a can of washed green pigeon peas.
adobo powder, 3 packets of sazon, salt and black Pepper and Goya tomato sauce together with olive oil.
2. Add 2 cups of washed parboiled rice.
3. Mix together and let boil until water starts drying out ( when you start seeing little holes in the rice) and then mix from the bottom up to prevent burning at bottom of pan.
4. Add water to pot, JUST ENOUGH over rice.
5. Add foil to lid and let sit for 20-25mins on low heat. Stir rice ( should be dry and fluffy)
Red beans:
2 cans red kidney beans
2 strips of turkey bacon
1 1/2 spoon of sofrito
1 packet of sazon
1 teaspoon adobo powder
1 can Goya tomato sauce
1/2 cup chicken stock
S & P to taste
1. Sauté bacon ( I used turkey bacon) sofrito, adobo powder, 1packet of sazon, salt and black Pepper and Goya tomato sauce together with olive oil.
2. Add 2 cans of washed kidney beans and mix.
3. Add chicken stock and let simmer for 5-7 minutes .
Aji Verde:
1 bunch of cilantro
1 jalapeño ( depending on how hot you want it)
3 cloves of garlic
1/2 cup Mayo
1/4 cup sour cream
1/2 lime
Olive oil to blend
S&P to taste

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Habichuelas guisadas are a staple in my family and bring back the greatest memories every time I get to enjoy them. These stewed beans are super easy to make and mega delicious!
For This Recipe:
2 lbs raw pinto beans soaked overnight
1 pack diced bacon
1 small red onion roughly chopped
1/2 green bell pepper roughly chopped
3 Tbsp tomato paste
¼ cup sofrito
½ bunch cilantro
1 Tbsp chicken bouillon
1 Tbsp Dominican oregano
1 Tbsp adobo
4 cups water (may need more or less to cover your beans)
Salt to taste
1. Heat your Instant Pot using the sauté function and add the bacon, onion and bell pepper and cook for 5-8 minutes or until the bacon is cooked through and the onion and pepper are lightly golden.
2. Add the oregano, adobo, chicken bouillon, and tomato paste to the Instant Pot, stir to combine and cook for 1 minute.
3. Rinse and drain the beans and add them to the Instant Pot.
4. Add the water and sofrito and stir to combine. Then, add the cilantro and submerge in the water.
5. Cover the Instant Pot, pressure cook for 25 minutes and allow the pressure to release naturally.
6. Remove the lid, turn on the sauté function and allow the beans to boil for 15-30 minutes or until desired thickness is reached. Add salt if desired and stir to combine.
Serve with white rice, your favorite protein, avocado and enjoy!
