minced 1 3/4 cups water 3/4 cup uncooked orzo 1/8 teaspoon salt 1 cup tightly packed chopped fresh spinach 2 tablespoons grated Parmesan cheese 1 tablespoon pine nuts :
toasted Melt margarine in a medium saucepan over medium heat. Add garlic and saute 1 minute. Add 1-3/4 cups water, orzo, and salt, and bring to a boil. Reduce heat to medium-low; cook 13 minutes or until liquid is absorbed. Stir in spinach and remaining ingredients. Easy Lemon Orzo Pasta Salad
Our favorite summer side dish - a quick orzo pasta salad with plenty of lemon, basil, and fresh tomatoes!
FULL RECIPE:
Joh makes Spinach Pesto w Orzo Salad
Ingredients:
Spinach or Arugula leaves 1/4 cup pine nuts Small amount of lemon zest 2 lemons juiced 1/4 cup shaved parmagiano 2 diced garlic cloves Olive oil (the good stuff) Salt and pepper to taste
Quick blanch of the spinach to set the color. Then into cold water. Drain and squeeze all of the water out. Enough to form 2 fist sized balls
Rough chop
Toast a quarter cup of pine nuts on the stove top. Don’t let them burn.
Put the spinach, cheese, garlic into the blender and slowly add the olive oil until it catches.
Add half of the lemon juice and a small amount of the zest.
Add salt and pepper to taste
Add the pine nuts
Again taste and add more lemon juice as needed.
For the Salad... Make a half pound of orzo Fine dice peppers Thin slice radish Halve the cherry tomatoes
Mix the spinach pesto with the orzo, peppers, tomatoes and radish
Garnish with shaved parmiagano and drizzle olive oil over the top

As we just celebrated the first day of winter in Australia, I’m daydreaming of Euro Summer, warm water and a long summer day. So bare with me while I live in absolute denial of the rain outside and enjoy this super summery meal prep.
I’m obsessed with sundried tomatoes, so it’s no surprise pesto rosso is one of my absolute favourites, and this lemony version is just perfect to bring life and flavours to this very simple orzo salad.
Ps: this salad is also amazing with a couple of handfuls of rocket or baby spinach for a nice green add-on, they just didn’t fit in my containers!
For our GF friends, the orzo can be replaced by quinoa or GF pasta ????
