CHICKEN WONTONS
chicken wontons are a type of dumpling commonly found in a number of Chinese cuisines.
Ingredients
All purpose flour 1 Cup
Corn flour 1/2 Cup
Melted butter 2 Teaspoons
Salt To taste
Hot water 3/4 Cup
Minced chicken(paste) 1 Cup
Til seed oil 1 Teaspoons
Msg 1 Pinch
Cabbage(finely chopped) 1/2 Cup
Egg yolk(yellow) 2 Numbers
Soya sauce 1 Teaspoons
Hoisin sauce(optional) 1 Tablespoons
Coriander leaves 1 Bunch
Spring onions 1 Tablespoons
Carrot 1 Tablespoons
Green chillies 1 Teaspoons
Ginger 1 Teaspoons
Garlic 1 Teaspoons
Oil 0
Crushed pepper 1/2 Teaspoons
Wonton sheets(small) 4 Numbers
Directions:
1.Take all purpose flour in a bowl and add corn flour, melted butter, salt, hot water slowly and mix it into a dough.
2. For chicken stuffing take mince chicken in a bowl then add til seed oil, salt, msg, cabbage, egg yolk , soya sauce, hoising sauce, coriander leaves, spring onions, crushed pepper, carrot , green chillies, ginger, garlic and mix well.
3. Add water and mix again.
4. Take the wonton sheet and wet the edges with water then keep the mixture in between and fold it.
5. Seal it by pressing with fingers and attach both the edges by applying little water.
6. Repeat the process with every sheet and make the wontons. 7. Once all the wontons are made fry them in hot oil till golden brown.
8. Take them out on a tissue paper and serve hot with any kind of sauce

Written Recipe for Chicken chilli wontons
For wonton sheets
Ingredients:
Refined flour 2 cups
Eggs 2 nos.
Salt to taste
Water as required
Methods:
In a bowl add, refined flour, salt to taste and break eggs and directly add and mix well with the flour, further add water, make sure you add less water as to knead a stiff a dough, you can add more flour if required.
If you would wish to reduce the quantity of the dough, you can use 1 egg for 1 cup flour.
Cover the dough with a damp cloth and rest the dough for at least 30 minutes.
Divide the dough in four equal parts, or you can also choose to divide them in medium size dough balls, coat the dough ball with flour and flatten it with hands, further roll the dough with the help of a rolling pin, in a very thin sheet, make sure to dust flour every time you roll to avoid the dough from sticking or overlapping.
Remember the dough is stiff in texture so it will require efforts to roll a thin sheet, if you have a pasta rolling machine you can do that too.
As you roll it in thin sheet, cut the sheet in 10 cm × 10 cm square sheets to make wonton wrappers.
Dust from over the wrappers so they don’t stick to each other.
For chicken filling
Ingredients:
Boneless Chicken 200 gm (minced)
Spring onion greens 1/4th cup (chopped)
Ginger 1 tbsp (chopped)
Garlic 1 tbsp (chopped)
White pepper powder a pinch
Salt to taste
Soy sauce 1tsp
Chicken stock 2 tbsp
Egg 1 no. (whisked)
Corn starch 1 tsp
Methods:
Mince the chicken boneless with a knife or in a food processer for ease of work.
Next, take a bowl, add minced chicken, spring onion greens, ginger, garlic, white pepper powder, salt to taste, soy sauce, chicken stock, egg and cornstarch, mix vigorously , keep aside to be used as a filling.
To make chilli wontons:
Ingredients:
Wonton sheets as required
Chicken fillings
Water for boiling the wontons
Oil 1 tbsp
Spring onion bulbs 1/4th cup (chopped)
Garlic 1/4th cup (chopped)
Ginger 1 inch (chopped)
Green chillies 3-4 nos. (chopped)
Stock / Hot Water 400 ml
Vinegar 1 tsp
Light Soy sauce 2 tsp
Dark soy sauce 1 tbsp
Green chilli paste 2 tsp
Sugar 1 tsp
Salt & White pepper powder to taste
Onions ½ cup (petals)
Capsicum ½ cup (diced)
Fresh coriander 2 tbsp (roughly torn)
Spring onion greens 1 tbsp (chopped)
Corn flour 1 tbsp + water 1 tbsp
Methods:
Take the wonton wrapper and keep it diagonally and place a small spoonful of chicken mixture and roll it till 3/4th, slightly press on the either edges and apply water, and stick the sides together. Your raw wontons are ready, sprinkle some flour to avoid the wontons from sticking until you cook them. Make as many as you want, and you can keep them frozen in a zip lock bag and use later as and when you want.
Set water for boiling in a stock pot, add the wontons and boil it for 5-6 minutes and remove it aside. By the time you boil the wontons make the chilli gravy, which may take roughly abut 4-5 minutes.
For chilli gravy, set a wok on high heat, add oil, chopped garlic, spring onion bulbs, ginger and green chillies, sauté it for a minute, add the hot stock or hot water and bring it to a boil.
Next, add the light soy sauce, dark soy sauce, green chilli paste, vinegar, sugar, salt & white pepper powder to taste, stir well and bring it to a boil.
Next, add onion petals, diced capsicum and mix gently, finish it by adding freshly chopped spring onion greens and fresh coriander leaves. Stir and cook for a minute on a high flame.
In a separate small bowl, add the cornflour and water and mix, further add this cornflour mixture to the wok and cook until the sauce thickens.
Place the cooked wontons over a plate and pour the chilli gravy sauce the over the wontons garnish it with some freshly chopped spring onion greens and serve it immediately.
You can also choose to fry the wontons and toss it the chilli gravy sauce and have it that way too.

About Wontons
A wonton (traditional Chinese: 餛飩; simplified Chinese: 馄饨; pinyin: húntun) is a type of Chinese dumpling commonly found across regional styles of Chinese cuisine. It is also spelled wantan or wuntun in transliteration from Cantonese 雲吞 / 云吞 (wan4 tan1) and wenden from Shanghainese 餛飩 / 馄饨 (hhun den). There are many different styles of wonton served throughout China, though most foreigners are only familiar with Cantonese wontons because of the predominance of Cantonese restaurants overseas.
Wontons are made by spreading a square wrapper (a dough skin made of flour, egg, water, and salt) flat in the palm of one's hand, placing a small amount of filling in the center and sealing the wonton into the desired shape by compressing the wrapper's edges together with the fingers. Wontons are commonly boiled and served in soup or sometimes deep-fried. There are several common regional variations of shape.
The most versatile shape is a simple right triangle, made by folding the square wrapper in half by pulling together two diagonally opposite corners. Its flat profile allows it to be pan-fried like a guotie (pot sticker) in addition to being boiled or deep-fried.
Each region of China has its own variations of wonton; examples include Beijing, Sichuan, Hubei, Jiangnan, Jiangxi, Guangdong (Canton), Fujian, etc. Dumplings and wontons from the 7th and 8th centuries CE were found in Turpan. Originating from China, wontons have also become popular in other East and Southeast Asian cuisines.

INGREDIENTS
For The Wonton and Filling (enough to make 50 wontons)
12 oz (340 grams) of ground chicken
1.5 tsp of grated ginger
1.5 tsp of grated garlic
1.5 tbsp of soy sauce (Amazon Link -

7 oz (200 grams) of freshly shredded zucchini (season with some 1/2 tsp of salt and squeeze the liquid out )

1/3 cup of diced scallion
1 pack of wonton skin (40-50 pieces)
To Cook The Wonton
6-8 cups of chicken stock or water
Baby Bok choy or other leafy vegetables depending on your preference
To Assemble The Wonton Soup (1 serving)

1/2 cup of the broth that you cook the wonton with
10-12 pieces of wonton
Diced cilantro as garnish
Diced scallion as garnish
INSTRUCTIONS
Shred the zucchini by using the largest holes on your grater. Season with 1/2 tsp of salt and rub for a minute. Let it sit for 10 minutes to allow the salt to draw out the moisture. Squeeze most of the liquid out of the shredded zucchini.
In a big mixing bowl, combine the following ingredients: 12 oz of ground chicken, 1.5 tsp of grated ginger, 1.5 tsp of grated garlic, 1.5 tbsp of soy sauce, 1 tbsp of oyster sauce and some black pepper to taste. Stir the filling within one direction for 3-5 minutes to develop the texture of the filling.
Continue by adding the zucchini, 1/3 cup of diced scallion, and a drizzle of sesame oil. Mix well and your filling is done.
To wrap the wonton, put some filling in the middle of the wrapper. Dip some water with your finger and wet half of the wrapper. Fold it in half. Pack it tight. Be sure to push out all the air. Make a small curve in the middle so it is easy to fold. Then you glue the two sides and pinch them together.
Before we cook them, we need to make the spicy flavor base. In a bowl, add the following ingredients: 2 cloves of garlic, press them through a garlic presser; 1/2 tsp of sugar, 2 tsp of soy sauce, 2 tsp of oyster sauce, 2 tsp of Chinese black vinegar, some Sichuan peppercorn powder to taste, and 1-5 tbsp of hot chili oil depending on your taste.
Bring 6-8 cups of chicken stock to a boil. Use your spoon to stir the broth to create a vortex. Then, put in the wonton. It takes about 2 minutes for the wonton to float to the top of the water, then monitor the heat at low and keep the pot at a slight simmer for another 5-6 minutes.
When it is almost ready, add some green leafy vegetables that you like. Let it blanch with the wontons for 20 seconds to a minute depending on your preference.
Turn off the heat. Scoop out about 1/2 cup of the broth and pour it into the flavor base. Follow up with however many pieces of wonton that you want.
Sprinkle some diced scallion and cilantro on the top.
