8 Servings 8 Chicken breasts, halved, -boned and skinned 1 ts Garlic powder 1 ts Paprika Salt and freshly ground -black pepper to taste 3 tb Safflower oil 2 c Beef broth 2 ts Cornstarch 1/3 c Dry red wine 2 tb Oyster sauce 4 Green onions, including -tops, chopped 1/4 c Pistachio nuts, shelled Chinese rice noodles Pistachio nuts (optional) Season chicken breasts with garlic powder, paprika, salt and pepper. Saute chicken in oil over medium-high heat. In saucepan, combine beef broth, cornstarch, wine and oyster sauce. Heat to boiling and simmer for 10 minutes. Add green onions and 1/4 cup pistachios. Prepare rice noodles according to package directions. Place noodles on heated serving dish, top with chicken breasts and pour sauce over all. Garnish with additional pistachios. PISTACHIO CRUMBED CHICKEN STRIPS *super easy to make*
RECIPE & VIDEO: ************ RECIPE Serves 4
1 1/2 cups (110g) breadcrumbs 1/2 cup (70g) pistachio, chopped finely 2 tablespoons of sweet chilli sauce 650g chicken tenderloins 1 large egg , lightly beaten Oil for frying (I use olive oil which can be costly so you can substitute with vegetable oil)Salt
Whisk eggs in a bowl. add sweet chilli sauce.
Combine crumbs and nuts in a medium bowl. Dip chicken in egg, then in breadcrumb mixture to coat.
Heat oil in a deep pan. Drop a small piece of bread , if it starts to fry and rise to the top, the oil is hot enough. Deep fry chicken pieces in batches. Approx 2mins or until golden and cooked through. Drain on absorbent paper, season to taste. Serve on a bed of salad.
