MAPLE PUMPKIN PIE
Makes one 11-inch pie
1 1/2 cups fresh or canned pumpkin puree
1/2 cup maple syrup
1 1/2 cups milk
2 eggs, lightly beaten
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon salt
1 11-inch pie shell
Preheat oven to 425 F.
Put pumpkin puree in a large bowl and add the maple syrup, milk, eggs;
mix until smooth. Stir in the dry ingredients and combine well. Pour mixture into the pie shell and bake for approximately 40 minutes, until filling is firm and a knife or toothpick inserted in the center comes out clean. Let cool on a rack before serving. Enjoy!

1915 Maple Sugar Pie Recipe - Old Cookbook Show
Today (2023) making a maple sugar pie requires a 2nd mortgage on your house... but in 1915 Canada maple sugar was relatively inexpensive and abundant. This is essentially a sugar pie - just maple sugar pie; it's also a custard pie, a maple custard pie.
Maple Sugar Pie
Heat one and one-half cups of milk in a double boiler and add one cup of maple sugar broken fine or grated. Bring to the boiling point, add two rounding teaspoons cornstarch mixed, with one-half cup milk and cook eight minutes. Pour a little over the yolks of two eggs and stir and return to boiler and cook until smooth. Pour into a paste-lined plate and bake.
Cover with meringue made of the whites of two eggs beaten stiff with one-quarter cup powdered sugar and brown.

how to make a maple pecan pumpkin pie
what's better than a traditional pumpkin pie? a maple pecan pumpkin pie!
this is a delicious twist on a traditional pumpkin pie recipe. it has all the goodness of a sweet pumpkin pie along with a candied crunch on top. with Thanksgiving coming up for some folks, give this recipe a try!
Ingredients:
pie crust: 2 cups flour, 1 tsp salt, 150 g chilled butter,
75 g shortening, ice water (about 1/3 cup),
1 egg, 1 tbsp milk
filling: 425 g pumpkin puree,
1 can condensed milk, 2 eggs, 1 egg yolk,
1/2 tsp cinnamon, 1/4 tsp each nutmeg & ginger, salt
topping: 1 cup brown sugar,
1/4 cup flour, 1/2 tsp cinnamon
1 stick butter, 1 cup chopped walnuts
1.5 cups pecan halves, maple syrup
Steps:
1. mix flour & salt. add butter.
cut in with a pastry blender until mixture is mealy.
add ice water, little at a time until the mixture comes together.
wrap in plastic. refrigerate for 1 hour. roll to 1/8 thickness.
cover an 11 tart mold with dough. bake at 375 F for 15 mins.
whisk together egg and milk. brush warm crust with egg wash.
2. whisk together pumpkin puree, condensed milk, eggs, cinnamon, and salt.
pour filling over cooled crust. bake at 425 F for 20 minutes.
3. mix together brown sugar, flour, butter, cinnamon, and salt.
add chopped walnuts. sprinkle the crumble over filling.
continue to bake at 350 F for 30 mins. bake until dark golden-brown.
4. remove from oven. arrange pecan halves. dizzle with maple syrup.
chill & serve.
