How To make Macadamia Nut Biscotti
FINE COOKING 11/12/94:
8 oz (2 c) unbleached all-purpose
Flour 2 ts Baking powder
1/2 ts Salt
6 oz (1-1/3 c) macadamia nuts
8 tb Unsalted butter; softened
1/2 c Sugar
2 lg Eggs
1/2 ts Vanilla extract
Heat the oven to 350 degrees. Sift together the flour, baking powder, and salt and set aside. Spread the macadamia nuts on a baking sheet and toast until light brown, about 10 minutes. Let cool. In a food processor, coarsely grind half of the nuts with one-quarter of the dry ingredients. Either in an electric mixer or by hand, cream the butter and the sugar until light and fluffy. Add the eggs one at a time, beating after each addition. Add the vanilla extract and mix until incorporated. Stir in the whole nuts, the ground nuts, and the rest of the flour mixture. Mix just until the dough comes together. Form the logs as described in the Almond Biscotti recipe (see p.35) and bake at 350 degrees for about 30 minutes, until lightly golden but still soft. Remove the baking sheet from the oven and reduce the oven temperature to 300 degres. Let the logs cool on the baking sheet for at least 10 minutes before slicing. Cut thelogs on a slight diagonal into 3/4-inch-thick slices. Place the biscotti flat on the baking sheet and dry
them in the oven for about 15 minutes, until the biscotti offer resistance when pressed, but the cut side hasn't begun to darken. Transfer the biscotti to a rack to cool. Store in an airtight container. MM Format Norma Wrenn -----

Recipe: White Chocolate Macadamia Biscotti
White Chocolate Macadamia Biscotti
1 cup butter
1 ½ cups sugar
4 eggs
2 tsp. vanilla extract
¼ cup amaretto liqueur
4 cups all-purpose flour
3 tsp. baking powder
½ tsp. salt
1 ⅓ cups chopped macadamia nuts
1 ⅓ cups white chocolate chips
Preheat oven to 325 degrees. Grease a cookie sheet or line with parchment paper.
In a large bowl, cream together butter and sugar until fluffy. Beat in eggs, vanilla and amaretto. In a separate bowl mix flour, baking powder and salt. Stir flour mixture into butter mixture. Fold in nuts and white chocolate chips.
Divide dough into 4 equal parts. Place each 1/4 of dough on cookie sheet and form into logs about 14 inches long and 1 1/2 inches wide.
Bake 25 minutes in the preheated oven, until very lightly brown. Cool and cut diagonally into 1/2 inch slices. Arrange slices on baking sheet and continue baking 8 minutes, until golden brown.

These delicious white chocolate macadamia nut cookies have a wonderful play of textures thanks to those buttery, crunchy nuts, melt-in-your-mouth white chocolate, and the soft, chewy cookie base.

WHITE CHOCOLATE MACADAMIA NUT COOKIES RECIPE LIKE SUBWAY | SHERLINA NYM
Hi my loves! Welcome back to my kitchen! Today I'm making white chocolate macadamia nut cookies and they're so similar to the Subway ones :) Scroll down for the recipe.
♡ WHITE CHOCOLATE MACADAMIA NUT COOKIES
What you need:
120g | 1/2 cup butter
80g | 1/3 cup sugar
100g | 1/2 cup light brown sugar
200g | 1 cup white chocolate chips
80g | 2/3 cup macadamia nuts
1 egg
2 tsps vanilla extract
1 tsp baking soda
185g | 1 1/2 cup plain flour
Pinch of salt
Mix all the ingredients together & roll out 15-20 balls! Pop them on a baking tray and bake them in the oven (180C/350F) for 10 min or until golden brown. Let them cool off for about 15 min :)
