Authentic - Texas Longhorn Chili, All Meat, No Beans
Hi everyone, my name is Kim....and I’m The Happiest Cook!
Today we continuing on our world tour and have landed here in Dallas, Texas and we are cooking up some Texas Longhorn Chili. My chili is full of meat, no beans, and absolutely delicious! Make it as spicy hot as you are comfortable with. What I am making today is just a medium spicy. The funny thing about chili is there are literally hundreds of recipes out there, with and without beans, some thick, some more like a soup, some eat it on rice, some in a bowl, hundreds of different toppings, and whose is the best? Well, I have taken everything I love about chili I’ve eaten since I was a child, and have come up with my version of the BEST!
So, have you got all your things ready to go?! I have mine, and like I always say, Let's Get Cooking!
Total Time: 1-4 hours hr. Serves: 4-6 people
Ingredients
3 cups Boneless Beef Chuck roast, cubed
3 cups Boneless Pork Roast, cubed
4 slices of bacon
1 28 oz can Whole Peeled tomatoes
1 Qt Bone Broth (can substitute Beef Broth)
1 Jalapeño’s, cut/cleaned and chopped
1 large onion, chopped
½ Bell Pepper, chopped
4 tbsp Chili powder
2 tbsp Cumin
5 garlic cloves – pressed
½ tsp Thyme
6 oz can tomato paste
Salt, Pepper, Onion Powder
Instructions
1. In an extra-large skillet with a lid (a large Dutch oven would work) fry up bacon and remove to paper towels. Leave the fat in the pan.
2. Cook up meat in a single layer in the bacon fat, sprinkling with salt, pepper, and onion powder.
3. Add additional bacon fat if needed. Remove to a bowl until later.
4. To the same pan add garlic and remaining spices. Add back in the meat, Bone Broth, Whole Peeled tomatoes (run knife through them before adding), and tomato paste. Stir and cook on low for a minimum of 2 hours.
5. Add chopped onions, bell pepper, and jalapenos. Continue to simmer for 1 1/2 hrs. Continue to stir occasionally.
6. If chili gets too thick, add additional broth. If too thin, then add a mixture of water with a tbsp of flour mixed well. Do not add too fast, just a little at a time.
Optional Toppings: grated Sharp Cheddar cheese, chopped onions, tabasco sauce, chopped
jalapenos, avocado, sour cream.
Serving Suggestions: in a bowl, over rice, with cornbread, on a hot dog, over Fritos or tortilla
chips with all the fixings, with crackers, so many ways! ENJOY!
