Earth Kingdom: Lion's Head Meatballs
I wanted to make some dishes themed after the four nations in Avatar the Last Airbender and we're beginning with the Earth Kingdom!

Ingredients:
1-2 quarts Herbal Chicken Broth
2 lb. ground pork
3 blocks of firm tofu, crushed
5 water chestnuts, finely diced
1/4 small cabbage, finely shredded
1 thumb sized iced of ginger, finely diced
1 tbsp Light soy sauce
3 tsp Dark soy sauce
2 tbsp sake
1 tbsp five spice
Oil for frying
Optional:
Steamed Bok Choy for garnish
Directions
- Mix in your ground pork with the tofu, cabbage, ginger, water, chestnuts, 5 spice, soy sauces and sake, with your hands.
- When fully incorporated, using a paddle firmly pulverize the mixture into a paste
- When the paste is done, coat your hands in cool oil and shape the mixture into large dramatic meatballs.
- When shaped put them into oil at 350ºF and allow the outside to fuse and brown, when browned remove from the oil and allow excess to drain. Continue with the rest of the mixture.
- You’re not cooking the meatballs here, just browning the outer part and sealing up the rest of the meat so it doesn’t fall apart when braising.
- In a separate pot with the broth, braise the meatballs until fully cooked, about 45 minutes on a low simmer.
- When the meatballs are cooked remove some of the broth and heat over a saucepan, add cold water and cornstarch together to make a slurry and then add to the broth in the saucepan to turn it into a sauce and pour over the meatballs.
- Serve on steamed Bok Choy or alone.

Shizitou, a.k.a. lion's head meatballs. These meatballs are awesome, and melt-in-your-mouth tender from a lengthy braise.

LION’S HEAD MEATBALLS
1kg ground pork
1 tbsp. garlic, chopped
½ cup leeks, finely chopped
1 inch ginger, finely chopped
2 tbsp. rice wine
¼ cup Good Life Oyster Sauce
1 tsp. salt
1 tsp. brown sugar
2 pcs. whole eggs
1 can water chestnut, drained
½ cup Good Life Bread Crumbs
1 tsp. chicken powder
1 tbsp. all-purpose flour
Sauce:
2 to 3 cups water
100g dried shiitake mushrooms, sliced
¼ cup Good Life Oyster Sauce
½ tsp. ginger, grated
2 tsp. brown sugar
¼ cup spring onions, chopped
sesame oil, as needed
salt, as needed
black pepper, as needed

Red Braised Lion's Head Meatballs Serves: 8 people
Prep time: 40 minutes
Cook time 1 hour and 10 minutes
For the Lion's Head Meatballs:
1 1/2 pounds ground pork (70% lean, 30% fat)
16 ounces firm tofu
2 eggs
2 tablespoons soy sauce
2 tablespoons dark soy sauce
1 tablespoon oyster sauce
1 tablespoon Shaoxing wine
Pinch of salt
1/2 teaspoon white pepper
1/2 teaspoon ginger, minced
2 stalks scallions, minced
1 handful cilantro stems
2 tablespoons cornstarch
4 tablespoons sesame oil
1/2 cup chicken stock
1 tablespoon all-purpose flour
6 cups canola oil, for frying
For the red braised:
1 tablespoon canola oil
3 ginger slices
2 stalk scallions, cut into 1 inch pieces
1 cinnamon
2 pieces star anise
1 tablespoon sugar
3 cups water
1 tablespoon soy sauce
1/2 tablespoon dark soy sauce
1 tablespoon oyster sauce
1 tablespoon Shaoxing wine
8 Napa cabbage leaves, halved crosswise

How to Cook Lamb Lionshead Meatballs and Ginger Scallion Buttered Noodles
The most dramatic, tender, and tastiest meatball you’ll ever have. They're not made of actual lion meat but are said to resemble the head and mane of a lion because they're just so big. As I just said before, dramatic.

Ingredients
2 lbs ground lamb
1 block tofu, cumbled
4 water chestnuts, peeled and minced
Bunch of parsley, minced
Nappa cabbage, minced
Scallions, minced
Ginger and garlic, grated
Light soy sauce
5 spice
Ground cumin
Broth
Ginger
Scallions
Chicken Powder and water, or prepared stock
Directions
Mix all the meatball ingredients and flavoring elements together and form large fist sized meatballs (or as large as you can manage without the falling apart)
Fry at 375º only until browned
Poach the fried meatballs in broth for 45 minutes
Serve
