How To make Linzer Thumbprint Snowballs
2 1/4 c All-purpose flour
3/4 c Walnuts, finely ground
1 ts Ground cinnamon
2 ts Grated lemon peel
3/4 c Granulated sugar
3/4 c Margarine, softened
1 Egg
1 ts Vanilla
About 1/2 cup raspberry jam Powdered sugar Heat oven to 350 degrees. Lightly grease cookie sheet. Stir together flour, walnuts, cinnamon and lemon peel. Beat granulated sugar and margarine in large bowl on medium speed until creamy. Beat in egg and vanilla until fluffy. Gradually stir in flour mixture. Shape dough into 1 inch balls. Place 2 inches apart on cookie sheet. Press thumb in center of each to make indentation. Fill each indentation with 1/2 teaspoon jam. Bake 12 to 15 minutes or until golden brown around edges. Ingredients:
1 cup (230g) Butter, softened
2/3 cup (85g) powdered sugar
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1 Egg yolk
2¼ cups (280g) Flour
Jam of your choice
Directions:
1. Line two baking sheets with parchment paper and set aside. Preheat oven to 170°C (340°F).
2. In a large bowl cream butter and powder sugar until smooth and creamy. Add egg yolk, vanilla extract and mix until combined. Add flour, salt and stir until incorporated and dough is formed.
3. Using a one-tablespoon cookie scoop or measuring tablespoon take 1 tablespoon of dough and roll into balls.
4. Then place the balls on prepared baking sheets. Slightly flatten the balls and then make an indentation with your thumb or with a back of a spoon into each ball. At this stage, if dough is too soft, refrigerate for 30 minutes. Then, fill each with cookie the jam.
5. Bake for 12-15 minutes, the cookies should still be pale, but slightly golden at the bottom.
6. Dust with powdered sugar (optional) and allow to cool on a wire rack.

How to make Easy Glazed Shortbread Thumbprint cookies (No Egg)
Melt-In-Your-Mouth Cookies made in no time at all. One minute glaze and less than 10 minutes to put together the cookies. After chilling for about an hour, the cookies are baked to perfection in just 14-16 minutes.
Note: These cookies will spread out a little and look whitish even when well baked. Don't over-bake. If they turn brown, they are going to be hard.
Oven temperatures vary. Newer models may have a shorter bake time. So watch them closely. Take them out and let them cool till they are firm. They will come out soft, airy and fragile when you take it out of the oven. When cool they are nice and just the right consistency.
Also, wait till cookies are well cooled to put the glaze. The glaze is optional. If you don't want extra sweetness, leave out the glaze.
You can use the shortbread cookie recipe for plain cookies or add nuts, chocolate etc in place of a jam center.

INGREDIENTS: Sugar cookie dough; jam or Nutella;1/2 cup confectioners' sugar. RECIPE: Prepare sugar cookie dough; chill and roll to 1/4-inch thickness. Cut out shapes w/ cookie cutter. Use smaller version of cutter to cut out centers of half the cookies. Transfer to baking sheet lined with nonstick mat; bake at 350F till lightly golden. Cool thoroughly. Dollop a tbsp of jam, Nutella or other filling into center of full cookie; top w/ cutout cookie. Repeat w/ remaining cookies. Dust heavily w/ confectioners' sugar.
Hi, I'm Katie Roseness and today I'm making Linzer Cookies.
So to make things even easier, I'm taking the same sugar cookie dough that I made earlier and I cut out stars and I also cut out the same stars with a smaller cut-out right in the center just like our stained glass cookies. So one is going to fit right on top of the other.
So any type of jam that you like. I'm using strawberry. But it can't get simpler than this.
I'm just going to take a spoon and dot it right in the middle. And you don't have to worry too much about moving it out to the edges because once the other cookie goes on top it's going to do all the pushing out for you. So the whole cookie will be filled with jam.
The same thing, just a couple more.
And then with my sugar sifter, I have powdered sugar and I'm going to coat the tops of my cookies with powdered sugar. And you want to be generous. You really want to cover the top.
And then very carefully with your fingers, you don't want to mess the sugar up and you don't want to mess up your sweater, but just on the edge of the cookie, hold it and push down on top of the other. Try to get ones that are about the same size.
